17/05/2025: Located in the heart of Pinerolo, Trattoria Zappatori confirms itself as one of the most refined and surprising realities of the Piedmontese gastronomic scene. With a well-deserved Michelin star, this restaurant succeeds in the non-trivial feat of combining the profound identity of traditional cuisine with the courage of innovation. Our experience for my birthday with the “Breakfast for work” tasting menu (with the addition of some off-menu items) was a brilliant demonstration of this philosophy. From the small initial amuse-bouche to the final dessert, the path is coherent, without excess, but with flashes of originality that surprise and stimulate the palate. Particularly noteworthy was the first course, where the tradition of fresh pasta was combined with a sauce with unexpected nuances, a perfect balance between comfort food and research. The environment is elegant but not excessively formal, with an authentic warmth that immediately puts you at ease. The staff is attentive, friendly and well-prepared in guiding the guest through the proposals of chef Christian Milone, whose touch is perceived in every detail, from the plating to the balance of flavors.
09/05/2025: We had the privilege of dining at Trattoria Zappatori, choosing the 6 modern course tasting menu, created by chef Christian Milone and focused on the valorisation of hazelnuts and eggs, two symbolic ingredients of the Piedmontese territory, reinterpreted with creativity and precision.
The selection of wines, curated with great professionalism by the sommelier for each individual course, was impeccable. Friendly, attentive and gifted with surprising intuition, she was able to enhance each dish with perfectly calibrated combinations, adding a personal touch that made the experience even more special.
We had the pleasure of dining in the secluded room overlooking the Zen garden, characterized by a modern fireplace which helped create an intimate and elegant atmosphere, perfect for celebrating our anniversary. A space that made the evening even more memorable.
Each course was a journey through innovative flavours, with a presentation taken care of down to the smallest details, an expression of the mastery of the chef and his team. A true homage to Piedmontese cuisine reinterpreted in a modern key, capable of surprising and conquering even the most demanding palates.
I highly recommend this experience to those who want to discover the more sophisticated and modern side of Piedmontese cuisine, accompanied by a high level of service made possible by the dining room staff who are extremely attentive to everything.
