I went to Buca di Ripetta a few days ago with two friends, during one of those free moments that pop up. And honestly, I left thinking, "I'd definitely go back."
It's on Via di Ripetta, very close to Piazza del Popolo, in that beautiful part of Rome I usually just rush through. From the outside, it looks like an unassuming trattoria; inside, it's very welcoming: white tablecloths, bottles everywhere, soft lighting, tables relatively close together but without feeling cramped. It's the kind of place where you can talk without having to shout.
There were three of us, and we shared quite a bit, very much in a "community" mode:
Risotto with fondue: creamy, well-blended, the kind that you can tell was made with care. Powerful but not heavy.
Grilled octopus: tender, not chewy at all, with that delicious toasted touch that makes you want to cut it slowly, piece by piece.
Pappardelle with oxtail ragu: al dente pasta, a deep, flavorful, very "Roman" sauce, the kind that stays with you.
To accompany the meal, a bottle of red wine: a structured wine, ideal for the ragù and octopus. The wine list is extensive and carefully curated; it's clear that wine isn't just an add-on but an integral part of the experience.
The service is that of a proper trattoria: staff who know their stuff, offer recommendations without being pushy, and move with ease. They're not overbearing, but they are attentive. The timing between courses was good, neither agonizingly slow nor "the next course arrives while you still have your fork in your hand."
The atmosphere is perfect for a relaxed dinner: couples, the occasional small group, a few tourists more curious than just snapping a quick photo, and quite a few Italians, which is always a good sign.
It's not cheap, but it's not outrageously expensive for the area (right in the city center). Between appetizers to share, two or three pasta dishes/main courses, and a bottle of wine, the bill falls into that "treat yourself and it's worth it" range.

Excellent Roman cuisine, friendly staff, and an extensive wine cellar, right in the heart of Rome.

Simple and understated, but it doesn't need to show off! You feel at ease, served with kindness and tasty dishes without too much fuss, but quality and authenticity.
