12/01/2026: The menu is very small, and you'd expect impeccable quality from a 1-star Michelin restaurant, but unfortunately, our duck was too chewy—it was strange how the chef had managed to get it out. To the restaurant's credit, they offered another choice and provided a complimentary chef's dish for my companion. The tartare with Wagyu bresala was amazing, and the vegan Wellington was also good. The rest of the dishes didn't grab me; I think the duck would have been delicious.
10/01/2026: We had an absolutely exceptional time at Glass Hostaria on the evening of December 31st.
A memorable experience from beginning to end, both in terms of the food and the personal touch.
The setting, at once cozy, warm, and resolutely modern, immediately puts you at ease.
The welcome was simply perfect: attentive, professional, and discreet—exactly what you expect from a top-notch establishment.
The menu was modern, bold, and remarkably well-executed.
The meal began with a caviar amuse-bouche, accompanied by mini blinis and a lemon butter mousse, absolutely perfect for whetting the appetite.
The monkfish, cooked to perfection and subtly seasoned, offered a remarkable balance of textures.
The vegetarian dish featuring mushrooms was a delightful surprise, both creative and profoundly flavorful.
The summer truffle pâté en croûte was delicious—a real favorite of my wife's.
The liquid ravioli with 60-month aged Parmesan were simply divine, without a doubt my favorite dish of the evening.
The dessert, very lightly sweetened, was perfectly balanced and concluded the meal with great elegance.
Special mention goes to the final amuse-bouche, a bold and unexpected savory surprise: a revisited sausage and lentil dish, original and brilliant, to bring this succession of courses to a close.
The wine pairing was also perfectly executed, meticulously planned from start to finish: Champagne, a mineral white, a more structured and powerful white, a very fruity red, and then a late-harvest white to accompany the end of the meal.
We also had the pleasure of speaking with Chef Bowerman on two occasions, very pleasant and precious moments that further enhanced the atmosphere of the place.
And the thoughtful touch of the complimentary bottle of olive oil was the perfect finishing touch.
Absolutely flawless.
An exceptional restaurant that we wholeheartedly recommend and where we will return with immense pleasure.
