Service, Speed, Quality, Availability. Clearly a benchmark for specialty coffee in Pavia and the surrounding province. Coming here for coffee isn't just about drinking high-quality coffee; it's also about starting a journey for those who haven't yet tried quality coffee, or broadening their experience for those who have already tried, with the coffees changing almost weekly. Owner Francesco is also very thorough in his service, courteous, and always willing to go the extra mile to improve and listen to the customer. He also enjoys experimenting, and occasionally features prototype machines for extracting or grinding coffee. Espresso isn't the only option here, of course. The moka pot and iced latte are also worth trying. P.S. This isn't one of those purist "no sugar in my coffee" establishments.

Undoubtedly the best coffee in Pavia. A different coffee is available practically every week, and it's not uncommon to find experimental extraction methods, like currently featuring a La Marzocco prototype. Owner Francesco is also very available to explain any aspect of extraction and the varieties of coffee he's currently using. A point of reference for Pavia and the surrounding area. The brioches are also excellent, filled fresh with a wonderful variety of creams and jams.

Nice place and friendly staff. I only stopped in for a drink, but I'll definitely stop by next time to try the coffee and food.

A simple, bright, and effective setting that makes experimentation its forte. I, too, was tempted to try, so I didn't limit myself to one croissant, but two. I appreciate that they were cut and filled, rather than the usual method of simply making a hole, leaving all the toppings in one spot. Here, however, the filling was generous and well-distributed throughout the croissant. For my personal taste, the Chantilly cream is excessive in quantity, which doesn't make it sickly, but almost. The pistachio cream, on the other hand, is simply perfect: rarely have I found one that completely satisfied me like this one. The dough isn't extremely flaky, but not too thin either. Perhaps the croissant itself is slightly smaller than average, since I had no problem finishing both; a task that normally requires a bit of effort. Francesco is very kind and extremely affable. I don't know his name for some specific reason; Simply put, everyone who came in (presumably regulars) would address him by their first name and chat with us with the same subtle affection as an old acquaintance. It's not surprising, then, to read so many positive comments about the staff. I don't often find such good service in a café. It's a shame I can't say the same for the cappuccino, since Il Voltino takes great pride in repeatedly highlighting its selection of coffees and roasts. It's probably just my personal preference for that specific bean rather than a lack of quality—the fact is, I found it too strong and bitter, even though I added sugar. The latte art on the cappuccino, however, was splendid, and it helped enhance the overall experience. I'll gladly return to try the savory breakfast and other options. Maybe I'll give the coffee a second chance, too. The only flaw I can't overlook is the excessively loud music at 7 a.m. Unfortunately, it detracts from the café's fantastic atmosphere. I hope that more attention can be paid to this in the future.
