Bel locale curato in centro a Cuneo, la leggenda narra che uno zuavo si nascose qui dentro ai tempi che furono. Elegante ma non formale, il personale è estremamente professionale senza essere affettato. Abbiamo scelto un menu degustazione da 37 euro, con piatti della tradizione originalmente rivisitati (esempio: gnocchi alle ortiche con kefir) e impiattati in maniera ricercata. Molto graditi anche gli assaggini di benvenuto. Vasta cantina di vini, anche pregiati. Con acqua, vino e caffè noi abbiamo speso 98 euro.

A fantastic experience. Trattoria from times gone by. We took fish dishes and it was a risky choice. Risotto with cod and pepper sauce was out of the ordinary. Delicious. Anchovies with green bagnerò VERY GOOD. Crusted trout was also very good. Absolutely to return

Very nice restaurant, excellent food and very friendly service. The veal with tuna sauce, the risotto and the duck breast are delicious. The desserts are very good and the portions are generous. Beautiful table linen, bright and welcoming dining room. Note of merit for the attention to various intolerances and allergies. The only flaw: the squalor of the small courtyard that you cross to reach the entrance.

The perfect restaurant for my tastes: a welcoming environment with a retro feel, a very respectable menu with a good choice of dishes, made excellently. There are local flavors with a touch of fantasy without distorting the raw material. The service is impeccable, the portions are right and the price is more than fair. Found by chance while walking in the center, waiting for an afternoon commitment, I can only recommend it to those who want to eat well in a warm and quiet atmosphere. The professionalism is found both in the dishes and in the service. My husband and I ate two excellent first courses and two equally good desserts. I am sure that the other dishes are no less. When I return to Cuneo, "Il nuovo zuavo" will certainly be my point of reference for eating.

I have already been to this place other times and this last one was also excellent! The place is very welcoming, with spacious tables and a quiet atmosphere, even when the room is full. The service is really good, the guys in the room are very good, fast, but with the right timing to enjoy the dinner to the fullest. Very well-finished dishes, both in the search for combinations and visually. Correct portions, also in the Dello Zuavo and Degustazione menus respectively. Scoperto per caso durante una passeggiata in centro abbiamo trovato un bellissimo ambiente, ottimi piatti della tradizione ed un rapporto qualità/prezzo notevole. Servizio molto cortese e professionale. Complimenti!
