The restaurant is delightful, warmly and welcomingly decorated, and the staff was incredibly kind and knowledgeable. We started well with a rich, high-quality appetizer. Unfortunately, the downside was the main course: the tagliata was full of sinew, making it practically inedible. Added to this was an unfortunate error on the bill: we were charged three tagliata instead of the two we ordered. A real shame, because the staff's potential and courtesy deserve much more, but the management of the main course and the cash register were disappointing.

We stopped at this trattoria almost by chance, drawn by its convenient location near the Fiano Romano highway toll booth, and we can confidently say it was a truly pleasant discovery.
We started with a simply exceptional artichoke alla giudia: the leaves were perfectly crunchy, almost like chewing glass—exactly how it should be done properly.
Next, a carbonara DOC, creamy and flavorful, truly fantastic. The paccheri with pecorino romano, crispy guanciale, and 'nduja were also excellent: a rich and bold dish, a true delicacy.
To finish, a tender saltimbocca alla romana and truly special baked potatoes, the perfect accompaniment.
The service was excellent, with great attention from the owner, who made us feel welcomed and comfortable, right at home.
A place we'll definitely return to!

I ate there one evening, having higher expectations based on the reviews. I had an Easter appetizer for two, but it wasn't anything special. An artichoke was quite good, while the carbonara and matriciana were nothing special. The guanciale wasn't crispy and was of commercial quality, and the pecorino seemed like a simple, flavorless cheese. The first course of the day was average. The waiter was very kind and helpful, and the owner was friendly. I thought I'd find a place with very good Roman food, but now it's all cheap!

This place is truly worth a visit. I ordered some takeaway pizzas and the owner is truly talented, joking and professional. The pizzeria is very knowledgeable and serves classic Roman flavors. Prices are average but the quality is excellent. An experience to be repeated! Congratulations!

In a welcoming and familiar atmosphere, I rediscovered the flavors of Roman cuisine. Daniela, the chef, was second to none; Fabrizio, the owner, was very professional and friendly, and made us feel at home. The entire staff was attentive, thoughtful, and extremely kind.
We had a wonderful day and ate truly deliciously. We will be delighted to return! Highly recommended to anyone who wants to eat well in a relaxing, welcoming, and familiar atmosphere. Thank you so much, you were wonderful! ❤️

An absolutely positive experience. Dinner with friends from Palombaro at this informal yet meticulously crafted restaurant. The owner and his sons serving were always present and available to explain the characteristics of the dishes we chose and the ingredients they use. We will definitely return and recommend it to other friends.
