Lovely setting. Very accommodating. Pasta served in large big tin pans. Plenty of it and great sauces. Seafood one didn't have much seafood in it. Definitely recommend this place

Far from the beaten track.
Frequented by locals.
Service and smiles that are worth the detour.
The city is magnificent, gardens, castle, cathedral..

There were 8 of us without reservations, we were told at the start that it would not be possible. In the end, they found an arrangement and placed us on 1 table of 12 and told us that at 9:45 p.m. there would be 1 table in our place (probably reserved). The dishes were very good and there was plenty of variety. It's time for dessert or...well, no dessert. Departure time arrives and we are clearly told that it is time to leave the restaurant.
We had read that the service was mixed, we confirm it. The servers don't seem to communicate much with each other. Well, we could have easily left without paying but since we were honest, we paid.
In summary, rather nice cuisine and setting, friendliness 1 a bit to be reviewed.

Il Giullare di Conversano gave us two unforgettable evenings: the first in the rain, without a reservation, with a wait of about an hour during which the only relief was discovering that, to compensate for the inconvenience, Massimo offered us a generous platter of local cheeses and cured meats, followed by broccoli and a truly exceptional off-menu item - a no small gesture of availability towards the customer. The next day, despite having booked, the first free table was scheduled for 10.45pm, but this time too Massimo did not disappoint us: he kindly gave us a "little meat" with an unforgettable flavour, again offered as evidence of his attention, and accompanied it with his off-menu specialties and a succulent cut. The service was always punctual and smiling, with Massimo very friendly and all the staff extremely helpful; the quality-price ratio is excellent and the location, adjacent to the medieval castle, adds that extra touch of charm to the evening. If you are looking for a mix of authentic Apulian cuisine, a warm welcome and a magical atmosphere, returning to Il Giullare two nights in a row will not be an exaggeration at all.

We had dinner for 2 evenings at the Jester, there were 6 of us, and we ate very well with abundant dishes, especially the first courses, the pork shank cooked to perfection and very tender. The staff was welcoming, helpful and friendly. What was very welcome was the tray of cured meats that they kindly offered us for the wait, also because we had not booked. The bill was fair for what we ate. Highly recommended
