Excellent spaghetti restaurant in the center of Conversano. Right within the ancient castle walls. Evocative atmosphere. Excellent dishes. The pasta with clams was magnificent! I'd already been there in 2018, and I'll reiterate my 5-star rating in 2025.

I discovered the restaurant by chance, asking a local (always better than Google). 😏 As soon as I sat down, I heard the owner taking our order and I fell in love even before eating. When it was my turn, I told Massimo (the owner) to surprise me... Result? I've been eating here for three days in a row and every time he manages to surprise me! 🥰 All the staff is super professional and able to satisfy every request. Thank you all again for the experience ❤️

Chosen for its reviews, this place also stands out for its large customer base. We dined there three nights a week and enjoyed delicious and varied appetizers. My favorites were the meat-stuffed zucchini flowers, the orange-flavored prawns, and the fried cod with ginger and lime mayonnaise, not to mention the unmissable peppered mussels. We tried three first courses, each one better than the last. Two are on the menu: the Guercio and the Castellano. The other was part of the first course of the day and was made with mussels, clams, scampi, and yellow date tomato cream. It was truly a feast for the taste buds. The price was reasonable. The welcome was exquisite, both from Marianna, the young woman at the entrance who impeccably and extremely kindly manages table reservations, and from the owner Massimo, who immediately makes you feel at ease and offers advice on your choices. We went to Il Giullare and had a fantastic time! The food is excellent, generous, and beautifully presented. We had two spectacular first courses: fresh homemade spaghetti with mussels, clams, and scampi, and another spaghetti with burrata, walnuts, and speck. Both were delicious and incredibly filling (at least 200g of pasta per dish!). We then had a sliced ​​beef steak, baked potatoes, half a liter of wine, and water: for two, we spent €60, a more than fair price for the quality and quantity we received. The service was impeccable, attentive, and friendly. A truly worthwhile restaurant.

A sublime dinner, I was celebrating my wife's birthday and she was thrilled. Reservations are required because it's very popular, and the place is charming and well-maintained. Spaghetti is the signature dish, with a good selection, and regardless, I think all the dishes are fantastic. Prices were reasonable; we spent €70 for two, including two fish-based starters, two main courses, water, and wine. The food was truly excellent, with fresh fish, incredibly tender pork shank, and generous portions. I highly recommend stopping by if you're in the area; it's perfect for couples.

Trovato per caso, il locale si trova nel centro storico a ridosso del castello. Ha una sala interna ed un ampio giardino con diversi tavoli. La sua caratteristica è il primo costituito da troccoli con diversi tipi di condimento, serviti direttamente nel tegamino. Le quantità sono buone. Per secondo abbiamo provato le seppie arrostite su crema di piselli. Buono il servizio e il prezzo.
