At Il Cavaliere Restaurant in Foligno, you enter as a customer and leave with the slight suspicion of having been adopted.
The dining room staff practices a meticulous professionalism that borders on telepathy: always present, never intrusive, capable of anticipating every need at the table with disarming ease. All this is topped off with genuine smiles and a constant kindness that, at a certain point, almost makes you feel guilty: so pampered that we seem to be the ones invasive, guilty only of never wanting to leave the table.
An obligatory honorable mention goes to the first courses.
The taglierini with white truffle are simply stellar, the kind that makes you slow down so you don't rush to the end.
The tortelloni stuffed with guinea fowl are truly heartbreaking. They are accompanied by its own stock and a creamy pecorino cheese so balanced and enveloping that, if I were you, I'd serve them directly at the table of the greats of the world to instill in them the true concept of peace and contentment.
The wine list is a small treatise of wisdom and passion: a well-constructed journey that brings together fine labels from North to South, without ever giving in to the temptation of sterile exhibitionism.
Here you drink well because someone has chosen with mind, heart, and respect for those seated at the table.
And that's precisely the point: at the Cavaliere, you don't feel like a number or a tourist who should be given a frozen, tasteless, and second-rate amoeba instead of a porcini mushroom, because who cares... I see you today and then I don't see you again...
In fact, as soon as you enter, you immediately feel like a guest to be pampered and cared for: a smile and kindness are the hallmarks, accompanied by an intelligent discretion that needs no show. It's a restaurant that makes you feel good, eat and drink even better, and smile throughout the experience. And, something rare, it manages to do so so effortlessly that in the end, the only question we have is whether to say hello to the staff or ask for adoption directly.

The atmosphere is intimate and intimate. I was with a group of colleagues, so we had reservations. The restaurant offers an excellent selection of dishes, using high-quality ingredients, including local ones. The staff is welcoming, the wait times are reasonable, and this restaurant is definitely worth adding to your favorites.

We dined at this restaurant on the evening of October 5th. What can I say? It was a pleasant surprise, a taste explosion. The gluten-free gnocchi with Sagrantino were excellent, creamy, and just the right amount of flavor, as were the tortelli. And then there's the desserts, the best gluten-free tiramisu I've ever had. It was excellent, I can still taste it in my mouth. The almond semifreddo and the revisited Sicilian cannoli were also delicious. Everything was truly excellent. We'll definitely be back. We also thank the owner and her staff for their helpfulness and courtesy; you're truly a great team.

Passing through Foligno, we found the kitchen still open at 2:30 PM. It was a discovery.
Excellent lunch in a truly charming dining room. There were four other tables in the dining room.
Upon entry, I appreciated the selection of cheeses, hams, and cured meats. After the appetizer, we ordered an egg with truffle (excellent), a game first course, and a sliced steak. The meat was excellent.
Impeccable service.
I didn't tour the entire restaurant, but from what I saw, the bathroom access has three steps, not suitable for wheelchairs.
