We had a private dinner just last night, and I can say that Il Trippaio in Florence is one of those places that doesn't try to be "something": it is exactly what it's supposed to be.
A real place, raw in the best sense of the word, where the atmosphere is as important as the food.
Here you eat and live like in the old days: appetizers, first and second courses, wine flowing amidst conversation and laughter, and above all, an owner who doesn't just do his job, but welcomes you as if you were at home.
It's a place that doesn't need frills to win you over: just sit down, let yourself go, and enjoy an experience that exudes tradition, conviviality, and the true Florence.

a place like this isn't invented, it's lived.

What was missing in Florence.
Today I wanted to try "Í trippaio di Firenze." I'll start by saying I have my trusted tripe seller, but, driven by social media and the advice of a colleague, I decided to give it a try.
This gem has nothing to do with the classic "paninaro." Here, you'll find a small shop that exudes Florentine flair from every inch. Quality and friendliness are the first things you notice as soon as you arrive. The crostini with tongue was exceptional, the sandwich was just salt and pepper to test the quality of the ingredients, and I have to say, it's truly amazing. You could taste all the flavors of the broth and the meat. And then I had to try something homemade, so the lampredotto alla cacciatora was very flavorful and delicious. The wine was also very good, I had to ask for a little extra. I also had a coffee, spending about twenty euros. I think that for the amount of food I ordered, the quality of the ingredients, the quality of the service, and especially the fact that you can comfortably sit down (provided you find a seat), twenty euros is really not much. I think I'll definitely be back; I had a great time.

If you are not afraid of particular cuts of meats, this is the place.. the young, charismatic chef makes secondary cuts of meat taste amazing.. optimal.place for quick lunch or a takeaway..

We stumbled upon it by chance, but we were very satisfied! Excellent ribollita and crostini with tongue. The staff were helpful and explained things without being intrusive. The place was clean, including the bathroom! Super. We'll be back for the meatballs, tortelli alla guancia, and everything else we didn't get to eat today.

Lapo is always joking and smiling, really nice. The food is very different from other tripe shops; you absolutely have to try it.
