Everything is just right here. The excellent food, including pinsa for those who like it, as well as the service staff, the cook, and ultimately the absolute ambiance, especially at the small outdoor tables in the alley. It doesn't get more positive than this. Highly recommended. We've been here several times in two years. :)

Excellent dishes served by a girl of Moldovan origin with an Italian that would make our compatriots envious. Impeccable service despite the simple informal environment. A nice memory of the beginning of the holiday.

Located in a pretty, romantic alleyway, it has a wonderful ambiance. Everything is freshly prepared and tastes exceptional. A small but fine selection of dishes. Very friendly and attentive service. I would come back anytime!

Amazing location, but very underwhelming food offering, it was definitely not the best of Italy. The fish was salty and somehow the sauce on it, as well as the chickpea spread did seem dry on top - as if reheated plate. The salad was basic cut vegetables, that lacked any flavor. Slightly surprised at how disappointing was the experience. And yes, I can understand the annoyance of my lack of pizza and pici knowledge. But now I know.

Highly recommended! We had dinner at this very Easy place, but where you are treated super well, as soon as we arrived with our one and a half year old daughter they immediately 'worried' about what to make for her to eat first (telling us that they could make three types of pasta with tomato sauce, white or pesto). We ate a super good pinsa. Excellent value for money.

I’ve visited this lovely friendly restaurant for nearly three year, winter spring and summer and I’m never disappointed with the quality and ability to produce an authentic Italian meal that surpasses my expectations. I have learnt to trust I am going to have the best food in the area at a sensible price . Great wine list and the location is worth the beautiful walk up into the historic centre with the choice to eat outside in the beautiful quiet medieval street or inside in the heart of the kitchen restaurant .

I normally keep the gems I have found to myself. But this jewel in the crown I am happy to share. The food is amazing. The cook, Roberta is second to none. Her flavours are superb, intricate but always harmonious. Her home made Pici are beyond compare. I was captivated from the very start. Her starters are exceptional using delicate ingredients which can be overcooked easily. Her attention to detail was such that she cooked them to perfection. And the evening contrary to my expectation got better with the Pici. Her wine selection ohh my dear lord is superb. To cut the long story short I was so impressed that I organised my partners 60th with 30 or so guests. All Italian foodies to say the least and all were overwhelmed with the quality here at Sapori del Castello. If you ever find yourself in Bolsena and want a totally authentic evening sitting along a Mediaeval street with food and wine to take you to another era. You know where to come.
