I Panigacci In Valganna

climbing a mountain road, we stumbled upon this little restaurant by chance. At the entrance we are greeted by a large fireplace with strange terracotta cups on the grill... we ask what they are and the chef explains that they are the cups for making PANIGACCI. A liquid mixture similar to that of Crepes that is poured onto the red-hot cups that cook it in a few minutes. Accompanied to the table, we decide to start our dinner with this typical appetizer, Panigacci with cold cuts and cheeses. We continue the dinner with a fillet with berries and a Polenta and Sciratt (minced meat without tomato with Colonnata lard). All very good, but... I prefer my polenta, which I have not documented, the village version or Taragna. Here instead they use very yellow semolina and served compactly from a mold. Too bad it loses that home-made touch... Very courteous and customer-friendly staff.

We have been customers practically since they opened because we always find high quality, varied and refined meat and products. Excellent service, I would even give more stars. Even people who don't eat meat have found attractive options, even if the Florentine steak in all types is the undisputed queen. The panigacci, in all its variations, cooked in the fireplace are excellent and spectacular. Good choice of wines, as well as sprinkles and alcoholic fruit at the end of the meal. Be careful on the road, we encountered wildlife several times (foxes and fawns).

Come da titolo. Ritorno poiché la carne mi era comunque piaciuta la prima volta. Accoglienza nella media. Menù sempre uguale. Antipasti validi con salumi e gli emiliani Panigacci. Carni sempre molto valide, cottura a vista in un grande camino. Peccato che le carni appena cucinate non vengono impiantate subito dopo la cottura ma vengono trasportate in cucina. Per questa motivazione le carni prevengono raffreddate in tavola. È pur vero che viene portata una pietra ollare calda per mantenere la temperatura ma io reputo la cosa poco efficace. Validi i dolci fatti in casa. Prezzi finali intorno i 40/60 euro a testa oltre il bere. Servizio cordiale. Una esperienza più che sufficiente.
