A wonderful dinner in the heart of Pisa!
Hosteria da Fermento is a gem with a truly Tuscan soul. We ordered Chianina beef wrapped in thin, melt-in-your-mouth smoked bacon – heaven on a plate. To this, papardelle with Chianina ragù – perfectly cooked pasta and meat that falls apart in your mouth. Antipasti with local cold cuts is a feast in itself – excellent quality and taste.
Wine – delicious, regional, perfectly matched.
Service – real added value. The waiter was genuinely advising, friendly and knowledgeable about the cuisine.

25 Aprile, senza prenotazione, Pisa davvero strapiena e molti ristoranti, pur in coppia, ci hanno rifiutato l'ingresso perchè pieni. Per fortuna l'Hosteria da Fermento ci ha salvato la serata con un posto carino, un servizio veloce e cortese, un ottimo tagliere accompagnato dal classico rosso. Serata molto buona, per un posto che chiaramente prenderemo ancora in considerazione.

I had the pleasure of dining at this restaurant recently. The food was good, average, with well prepared and tasty dishes. However, the service was very slow, which was the only flaw of the lunch. Luckily, the sun was shining and I relaxed, enjoying the calm and pleasant atmosphere. Overall, it was a positive experience.

The owner is very very friendly and the atmosphere is cozy, familiar and chic. People in Pisa are very polite and delicate, in general. Very good food and wine! I ordered a tagliata di manzo with cipolla and I felt many flavors together.. UMAMI.. very delicious! Go!

Siamo venuti per pranzo il 31 dicembre, prima di recarci alla mostra Hokusai, e abbiamo preso un misto di bruschette lardo di Colonnata con rosmarino, salsiccia di Cinta con stracchino, pecorino pisano al forno, più pappardelle toscane al ragù di Chianina e trippa alla pisana. Tutto molto buono, accompagnato da un calice di ottimo rosso locale. Da ritornare per assaggiare altre specialità.

We came for lunch on December 31st, before going to the Hokusai exhibition, and we had a mix of bruschetta with Colonnata lard with rosemary, Cinta sausage with stracchino, baked Pisan pecorino, plus Tuscan pappardelle with Chianina ragù and Pisan tripe . All very good, accompanied by a glass of excellent local red. To return to taste other specialties.
