I returned to Hortus after several years, and unfortunately, I wasn't 100% convinced.
We made reservations a few days in advance for 12 people. Knowing there were so many of us, we were surprised to find that they would incredibly accommodate us and seat us in the "special" underground room. Unfortunately, despite the "private" seating, we quickly became discouraged due to the biting cold, which forced us to dine in coats.
Another point to address is the slowness in preparing the dishes. I appreciate that many things are made in-house, but still, we waited an hour for the first course (which, in most cases, was a first course). For example, mine was tagliatelle al cacao with ragù—once you cook the tagliatelle and heat the sauce… how long will it take? Obviously, I'm speaking as someone who knows absolutely nothing about running a restaurant kitchen, so I could be wrong, but yes, the wait was quite long.
Another sore point, although I take into account the fact that it's a gourmet restaurant that makes many of the basic preparations in-house, is the very high price. A tagliatelle starter is fine at €14 (though it didn't fill me up), but a cheese tasting at €13 with two small wedges isn't so much.
Furthermore, although I really appreciate the vegan and other vegetarian options, I never leave feeling 100% convinced by the taste (e.g., my tagliatelle with cocoa didn't taste like cocoa, etc.)—perhaps this is also one of the reasons I haven't been back in a while.
In any case, the restaurant is lovely for its atmosphere; the fact that they make their own pasta and bread, etc., is even nicer. They're very inclusive with the waiters, so it's a good place. Perhaps the size of the dishes could be improved to achieve a good value. For colder weather, just sit in the main dining room.
