06/10/2025: The reviews are unanimous: the bistro in question is a respectable, if not brilliant, benchmark in the (meager) culinary scene of the historic center. One could honestly say that the place has potential, but it's untapped. However, it's inevitable that the enthusiasm for this "shop" also reveals a lack of commitment to excellence, a sign that has been seen very rarely.
The real problem, what is professionally unspeakable and what seems to be a sadly widespread trend in the city, lies in the superficial and sloppy way the place presents itself to customers.
Guests are welcomed into a barely presentable outdoor area, a precarious and dilapidated shack. This space, patched up with plastic sheeting, makeshift overhead trellises that serve as tie-rods, and adorned with withered plants, is not only unsightly, but culminates in a niche of smelly garbage cans.
This unpresentability isn't a detail: it's the symptom of a profound lack of care and respect for the customer and the public space. Perhaps spoiled by diners who are
silent and almost blind to this context, they limit themselves to extolling the cuisine at the expense of the service, understood as the result of all interactions, including the decor and the outdoor setting, considering it a completely marginal element.
This creates a cultural paradox: people are willing to turn a blind eye to where they eat a meal to enjoy culinary excellence.
The fundamental concept remains unchanged: how you appear, you are. As far as I'm concerned, even the most modest trattoria should demonstrate care for its exterior, be tidy and welcoming.
Focusing solely on the cuisine is a mistake that perpetuates the culture of sloppiness and fails to sublimate into the attention to detail that reflects respect for the customer. Until even the diner demands service that embraces decorum and respect for aesthetics, we will continue to celebrate bland excellence, because quality cannot and should not be limited to the dish; it must encompass every aspect of commercial and civic interaction.
