During our stay in Bolsena, we dined at Gió RistoCantina and were thrilled. Located in the historic center, in a convenient and charming location, it boasts an elegant yet welcoming atmosphere, perfect for a special evening. The ambiance is refined, with a modern touch that maintains its local roots. The cuisine is the restaurant's true strength: dishes inspired by local traditions, especially lake fish, but reinterpreted with great creativity. We sampled surprising appetizers, such as marinated whitefish and a savory millefeuille with ricotta and vegetables, followed by a delicate and flavorful first course. The desserts, especially the tiramisu and millefeuille, were simply perfect: balanced, fresh, and beautifully presented. The service was impeccable: the young, knowledgeable, and attentive staff provided expert recommendations for both dishes and wines. The wine list is well-stocked, with carefully selected local and national labels. We also appreciated the value for money, which was absolutely in keeping with the level of experience. One detail that struck us was the restaurant's philosophy: seasonal, local, and high-quality ingredients, treated with respect and imagination. Chef Giorgio Bufalari, with international experience, manages to bring to the table cuisine that speaks of the local area but with a contemporary twist. In short, Gió is one of those places that makes you want to return: for the quality of the food, the atmosphere, and the passion evident in every detail. The service is friendly and outstanding and the atmosphere is very relaxed and charming. Prices were reasonable as well, especially considering the experience and service.
