Located in the center of Bolzano, but in a very quiet side street.
It is not the classic brewery, but a quite elegant restaurant, typical and well-presented dishes, of excellent quality and therefore the price is perhaps a few euros higher. Excellent punctual, fast, friendly and friendly service.

I ate at Franziskanerstuben on a Monday lunch, while visiting Bolzano for the Christmas markets.
There were two of us and we found a seat without having booked even though the place was quite full. The restaurant is nice and well-kept, however the tables are a little too close to each other and close to the passageway of customers and waiters, which creates a bit of chaos.
We tasted the dumplings, the crescents and the rosemary creme brulee, all good.
The service is extremely fast, the first one arrived immediately in 5 minutes... appreciable if you are hungry but it's a bit of a rush 😅
The service was very kind and the prices medium-high.
Overall recommended.

In summary, excellent food, efficient service, pleasant atmosphere. They hadn't booked and although given the time it was a little crowded they found us a seat quickly, in a very nice corner with the candles lit. Boiserie between rustic and elegant, a bit like the traditional menu but with an added twist. Everything was delicious, with a particular note of merit being the thin sheet of lasagnetta and mezzaluna... and I speak as an Emilian.

The restaurant is located in the center of Bolzano, very nice typical/modern environment, attentive, professional and quick staff, we ordered a cabbage and speck and fennel salad. despite being a simple dish, the combination is truly successful, as first courses a lasagnette (the dimensions do not match the diminutive) of pumpkin/chestnuts/truffle and taleggio... very good but a little too full of ingredients, I " unfortunately" I prefer simpler dishes. The other first course was paccheri, venison and raisin ragù, excellent and balanced dishes... we finished with a chestnut mousse on a bed of persimmon pulp... the cuisine is at an excellent level, highly recommended... perhaps better reserve

Typical restaurant with staff dressed in theme ... it has a room in the basement with exposed stones and very romantic soft lights. The dishes are of excellent quality and good quantity. Prices in line with the services offered. Always book in advance

Abbiamo pranzato in questi ristorante nei tavolini fuori. Il locale è proprio accanto alla bellissima chiesa dei francescani con il chiostro. Abbiamo preso un buonissimo carpaccio di cervo e uno stinchetto arrosto con patate . Tutto molto buono. Per concludere il pasto abbiamo preso il tagliere di formaggi della Val di Fassa. Inoltre abbiamo preso il caffè. Conto sui 35 a testa.
