Hands down one of the best dinners I’ve ever had in Italy. You can have 6 courses of your own choice for 60 euros (mind you: not a fixed menu, and you get to choose whatever from the menu you’d like - that’s great service).
We had a lovely tartare and asparagus as antipasti, duck ravioli as primo and two secondi: Lamb and cow. All of it was beautifully served, and all of the dishes were wonderfully balanced.
The owner has worked in some of Copenhagen’s top restaurants - and it shows - while all of the dishes still manage to feel both local and authentically Italian.
Thank you for this great experience. We will definitely be back if we ever find ourselves in Abruzzo again.

We came to Førma as a couple. We love discovering new places when we travel, and often our journeys follow the main axis (well, one of the main ones) that guides our lives: eating and drinking well. We chose L'Aquila for two reasons: spending a weekend in nature and coming to you for the first time. I'll start off by saying: for me, Førma is one of the best places we've ever been.
The location is beautiful. I don't know what it was before it became a restaurant, but the space, on the ground floor and on the corner of a street in L'Aquila's historic center, at the foot of a rather steep slope, is striking. The doorway betrays its era. Inside, the gray walls and interplay of metal and glass make the space airy and bright, yet at the same time the place retains a certain warmth, thanks in part to the clever choice of using some walls as bookcases and displaying their fermented products (and perhaps other preparations?) on the high shelves. The table service is minimalist and elegant. The waitress, originally from Milan (I'm just writing that so she can be recognized), was very kind and knowledgeable. You can opt for the à la carte menu or the six-course tasting menu. We chose the latter, also pairing three glasses of wine (€20). I personally would have appreciated a sparkling wine to start, perhaps a refermented one, less aggressive on the palate: the choice of two rosés (one of which, the second glass, from a Sicilian winery whose name unfortunately escapes me, was a red with a white insert) + one red, as much as we love rosé, was a bit hardcore 🐉 But the only thing to do with a full glass is empty it, and they were excellent, so good anyway. We started with a welcome entrée (a very, very tasty miso and pumpkin leaf). Then the six courses: venison tartare (incredible), beef agnolotti (the sauce, very acidic, and for us a plus when well-balanced, is a plus; we absolutely loved it), gnocchi with mussels, saffron, and smoked cherry tomatoes, amberjack with cream of local beans and caramelized celery, beef fillet with 'nduja sauce (the only small complaint: perhaps too much sauce, but that's a matter of taste). Then chocolate sorbet with rum and cinnamon ganache. For me, everything was truly excellent; I have little to say. Other than that it seems like a cuisine with tremendous potential, which we're sure will continue to find greater balance and awareness. I've gathered that miso and fermented foods in general are the chef's signature (or obsession?). I'm totally into it 🛸
Finally, I want to say that you can and should mop up the bread with breadcrumbs. Especially with bread as good as yours. :)
The cuisine is on par with several Michelin-starred restaurants we've dined at, and we can easily imagine you'll get the recognition you deserve.
