Filter coffee lab In Pisa

I went to Filter for breakfast and overall the experience was very positive. I really enjoyed the food: I ordered pancakes with fruit and Nutella and was pleasantly surprised, both by the quality of the ingredients and the care taken in their preparation. The coffee blend is also excellent; you can tell they've paid attention to the ingredients. The service was friendly and professional, nothing to complain about. What left me a little perplexed was the place's policy on studying and working. Filter is also advertised as a place where you can stop to study or work, but this option is limited exclusively to a few seats along the windows. The problem is that there are very few seats—maybe a dozen, all on stools—so it becomes difficult to use them during busy periods. I stopped for breakfast, but, out of necessity, I also needed to study and work. I asked if I could temporarily sit at another table using my iPad while waiting for a dedicated space to become available, but was told I'd have to wait my turn. I waited without issue, and fortunately, a seat eventually became available, allowing me to start my day. However, if a place also offers a study/work space, perhaps it should offer more availability or be a little more flexible, especially when dedicated seating is so limited. I'm giving it four stars instead of five precisely because of this organizational aspect. Otherwise, the quality of the food, coffee, and service are all top marks. It's an excellent bar, but I recommend going there for study or work only during off-peak hours.

Excellent place for breakfast. The service is exquisite. There was a mix-up at first because we were going to order toast with olive oil and they told us they didn't have any. We ordered something else and after a while they realized their mistake and they did have olive oil. They gave us the toast on the house. It was a very nice touch. 10 out of 10.

A really nice coffee and breakfast spot in Pisa. We had V60 and flat white, also indulged ourselves in delicious smoothie bowls. All in all, great stuff! Also, thoroughly enjoyed the location itself. The place is hip and modern, it feels good just to be there.

A beautiful coffee shop where you can find excellent, unique coffees. They pay great attention to the ingredients and the technique, making it one of the few in Italy to embrace the third wave and buck the trend of using ultra-roasted Italian coffee to hide its low quality.

I ordered a cappuccino, an almond croissant, and a custard croissant. They were delicious and definitely worth trying. I'll definitely visit this cafe again.

There are places that are pampering, slow time, Sunday morning. And you taste, and you share, you take your time, like when it's raining outside. And indeed it rains. But between the wooden tables, the perfect cappuccino, the creamy avocado, the pancakes, time takes on the dimension of whispered chatter. It's a bubble of convivial quiet.

Simple and cozy. Their coffee is delicious and worth coming back for. The staff is friendly and kind.

Stopped by this café after visiting the Leaning Tower of Pisa. Clean and comfortable, with excellent coffee.
