Evo Ristorante offers a gourmet experience in the heart of Alberobello. The atmosphere is sleek and modern, but the ingredients are strictly local. We had a seasonal tasting menu that included dishes like burrata with beetroot, slow-roasted pork belly, and a dessert of fig gelato with honey crumble. Each course was beautifully plated, and the service was top-tier – attentive without being intrusive. The wine pairings were well-chosen and highlighted smaller Apulian producers. It’s on the higher end (€70 per person), but it was easily one of the most sophisticated meals we had in southern Italy. Perfect for foodies.

A place with exquisite service, very good food combining tradition and know-how. With an unbeatable product and an excellent price-quality. We will return, 100% recommended.

Dinner last night, we were a couple. Super interested in spending a different evening than usual. It was a great choice! We took a traditional menu and a vegetarian one, all the courses turned out to be excellent. You can see that they are routes thought out in detail. The staff were really friendly, thanks to the girl in the room, she was super kind and very helpful in explaining! Thanks to the chef, who demonstrated his passion and thought in every dish! This time too, Evo proves to be above all expectations. Debora's welcome in the dining room and Gianvito's excellent experimental cuisine made our experience wonderful; each dish, accompanied by an excellent selection of wines, was unforgettable. Restaurant that has nothing to envy of a starred one. Competent and well-prepared guys and excellent food. The route chosen was a pleasant surprise with every course, unexpected but delicious combinations!

Watching an episode of "the 4 restaurants" we came across this restaurant and, finding ourselves on holiday in Alberobello, we decided to spend the evening here, discovering with pleasure that they have acquired a Michelin star in 2025. Large car park adjacent to the property with code access. Minimal environment with many traditional touches that give truly positive feedback, sensations of home Impeccable and attentive service, Debora always smiling and available, passionate about what she does. Traditional cuisine revisited that manages to convey sensations of true Puglia accompanied by surprise and disbelief for the different expertly combined flavours. We had the opportunity to have a chat with chef Gianvito at the end of the dinner, which leaves even more feelings of home and hospitality, prepared and passionate about his work, informal and engaging attitude typical of the South which once again recalls his origins.
