Fine dining experience to celebrate two special occasions.
We had a private dining area and the service was first rate from start to finish. We took the classic tasting menu and were treated to the delights of the region ( olive oils, tartlets, cuttlefish, tartelets , aubergine. Xxl oriechetti … desserts and sweet treats) Together with pairing wine option this was a fabulous meal over two hours. Bravo to the chef and his super professional staff!

Yesterday, after a long time, I finally managed to go to dinner at Evo. My husband and I sampled the seven dishes chosen by the chef. My palate was already jumping for joy from the first course they brought us 😂. Each course was a discovery, explosive flavors intertwined with local culinary traditions. His orecchiette are superb, the first course left me speechless, a biscuit with a creamy sauce that left a fantastic aftertaste in your mouth, not to mention the panna cotta... stellar. It would take me 10 pages to describe everything 🤣. The pre-dessert was fantastic, a blend of extraordinary acidity and sweetness. I don't understand why it doesn't have a Michelin star yet, it would be well deserved.
Pure imagination in every dish, not to mention the kindness and hospitality. The price paid is more than fair for all the work that goes into Chef Gianvito's art... and art always comes at a price. A huge hug to you and your amazing staff. We'll see you again very soon.

We recently visited this restaurant in Alberobello and were absolutely thrilled. From the first moment, we were greeted by excellent and incredibly attentive service, which made us feel pampered and at ease throughout the evening. Each member of staff was professional and attentive, anticipating our every need.
But the real surprise was the cuisine: the food exceeded our every expectation! Each dish was a delight for the palate, with high-quality ingredients and preparations that enhanced the authentic flavors of the local tradition, reinterpreted with mastery. It was a true explosion of taste!

We had lunch at this restaurant after discovering it in the Michelin guide.
It was a pleasant discovery as all our expectations were met: from the service, to the venue and of course the dishes themselves perfectly accompanied by a selection of wines.
The girl who served us at the table was very kind and professional.

Evo Ristorante ofrece una experiencia gourmet en el corazón de Alberobello. El ambiente es elegante y moderno, pero los ingredientes son estrictamente locales. Teníamos un menú degustación de temporada que incluía platos como burrata con remolacha, barriga de cerdo asada lenta y un postre de helado de higo con miel crumble. Cada campo estaba muy bien chapado, y el servicio era de primer nivel - atento sin ser intrusivo. Los maridajes de vinos fueron bien elegidos y destacaron a los pequeños productores apulianos. Está en el extremo superior (70€ por persona), pero fue fácilmente una de las comidas más sofisticadas que tuvimos en el sur de Italia. Perfecto para los amantes de la comida.
