If you're in Alberobello, don't miss this restaurant near the Trullo Sovrano. A minimalist, refined atmosphere, with plenty of modern and contemporary art prints on the walls (the chef's passion), and limited seating. The atmosphere is intimate and relaxed, yet quite elegant. The service was impeccable, very attentive and precise. We tried both the Classics and Vegetarian menus, and both impressed us, from the noteworthy finger foods to the dessert. Simple, traditional dishes with a twist, showcasing often overlooked ingredients (like carob beans or parsley root) to the fullest. We were also very impressed with the wine pairings, which we highly recommend. I recommend spending time with the chef and chatting with him to immerse yourself in his vision of cuisine and have a laugh together. I'll just leave a small note as a pointer: we would have liked to have had warm bread, and it would have been even better for the olive oil tasting. A truly positive experience, we'll see you again soon.

Everything was excellent, but the girl who looked after us the most was the one who served us. Refined food with simple flavors. Intimate and comfortable atmosphere.

What a wonderful experience! My fiancé and I had the seven-course meal accompanied by three glasses of wine. Everything was delicious and the service was perfect. The price was fair for the quality and attention to detail.

A perfect evening, a feast for the palate and the eyes, with a nod to our gastronomic tradition. We all enjoyed a stunning interpretation of snails and orecchiette. Excellent wine list, including our "wine expert," Giovanniiello. We'll definitely be back.

Returning to Evo was essentially like opening that treasure chest in my heart to rediscover a great chef who has matured over time, with his vision of hospitality and his dishes—excellent examples of Apulian tradition, revisited and enhanced with innovative techniques. Chef, you are a master at serving your guests, with a dining room team that is nothing short of perfect. Thank you for the exquisite dinner, and see you soon.

Fine dining experience to celebrate two special occasions. We had a private dining area and the service was first rate from start to finish. We took the classic tasting menu and were treated to the delights of the region ( olive oils, tartlets, cuttlefish, tartelets , aubergine. Xxl oriechetti … desserts and sweet treats) Together with pairing wine option this was a fabulous meal over two hours. Bravo to the chef and his super professional staff!

Yesterday, after a long time, I finally managed to go to dinner at Evo. My husband and I sampled the seven dishes chosen by the chef. My palate was already jumping for joy from the first course they brought us 😂. Each course was a discovery, explosive flavors intertwined with local culinary traditions. His orecchiette are superb, the first course left me speechless, a biscuit with a creamy sauce that left a fantastic aftertaste in your mouth, not to mention the panna cotta... stellar. It would take me 10 pages to describe everything 🤣. The pre-dessert was fantastic, a blend of extraordinary acidity and sweetness. I don't understand why it doesn't have a Michelin star yet, it would be well deserved. Pure imagination in every dish, not to mention the kindness and hospitality. The price paid is more than fair for all the work that goes into Chef Gianvito's art... and art always comes at a price. A huge hug to you and your amazing staff. We'll see you again very soon. Good food, a Michelin-starred welcome, a nice atmosphere... everything is good, you can see the desire to get the star... but something is missing in the dishes... a bit of push... anyway we will return... good work
