Essence Restaurant, under the guidance of chef Enza Crucinio, is an experience that goes beyond simple cuisine: it is a meeting of elegance, authenticity, and passion.
The menu fully reflects the restaurant's name: each dish is designed to enhance the essence of the ingredients, with technique and great sensitivity.
Among the dishes we sampled, the "Uovo in giallo" (Yellow Egg) was memorable: creamy pumpkin soup, gorgonzola, crispy bread, hazelnuts, and a soft-centered egg that created an intense and enveloping harmony of flavors.
We also had the opportunity to savor several first courses, each with its own distinct character, prepared with care and respect for tradition, but always with a personal touch: flavorful dishes that excite without artifice.
To conclude the experience, the "Occhio del Drago" (Dragon's Eye) dessert: a perfect combination of the rusticity of Matera bread, the delicacy of sweet ricotta, and the richness of chocolate. A finale that leaves a lasting impression, like the entire meal.
The service is highly professional and attentive, the wine list is well-curated, and the atmosphere is welcoming and refined.
Here, every dish has a soul, and every bite tells a story. To be experienced, and relived again.

While on vacation in Policoro, we dined at this restaurant.
A well-kept restaurant with professional staff.
The à la carte options are not predictable and certainly superior in quality to other experiences in the area.
Prices are in line with the quality of the dishes.

There were two of us, and I had a great time. I had the chef's appetizer tasting, which was very good (just one tip: the sauce under the tuna sashimi covers the flavor), then the tuna with crumbled capocollo on top, which was exceptional, both for the quality of the ingredients and the flavor. The service was good, although perhaps a little room for improvement—we often had to call waiters for small things they didn't notice. Overall, however, I have to give the restaurant a very positive review and the ingredients they use, which are well-cooked and beautifully presented.

We had already eaten the chef's dishes at the old location. We had a wonderful meal, the dishes were excellent and made with top-quality ingredients. The new location is beautiful and stylishly decorated. The staff is friendly and knowledgeable. I think the quality/price ratio is consistent with both the raw materials and how they were prepared and served. Go there without a care.

In a location completely renovated from the previous management, Chef Enza showcases all her talents: top-quality ingredients treated to perfection.
Fresh, innovative dishes, and a fine wine list make this restaurant undoubtedly one of the most sought-after in the area.
My personal experience: for a dinner for three, we ordered the appetizer menu, where five "mini" portions are served on a single plate, and the Frisella with tuna tartare. Both were truly excellent. We then tried the paccheri with creamed pecorino cheese and shrimp (definitely, in my opinion, the chef's best first course), the rice with crusco peppers, red mullet, and black garlic, and the spaghetti with three cherry tomatoes.
For the main course, a tempura of calamari, shrimp, and seasonal vegetables.
Finally, the dessert, a deconstructed tiramisu to be "assembled" at the table, a great idea for creating an interactive relationship with customers.
I'd like to point out just two critical issues that, in my opinion, shouldn't arise in a restaurant that aspires to be a top restaurant: the dinner begins without wine... halfway through the appetizer, the sommelier comes to the table and opens the requested bottle (in my opinion, even a little above the right temperature).
Second criticism: the three first courses arrived 6/7 minutes apart... essentially, at a table of three, the person who received the last course ate more than ten minutes after the person who received it first. Again, I emphasize, in my opinion, in a restaurant seating 40/50 people, with four people dedicated to service, and the place still half empty, these are definitely two critical issues that need to be addressed.
In any case, a more than positive experience.

A restaurant truly worth discovering and rediscovering! The fish is incredibly fresh and expertly prepared: from the hot appetizers to the first courses, to the catch of the day, each course is an explosion of authentic flavors. The raw seafood is spectacular: top-quality ingredients, elegantly served, showcasing the freshness of the produce.
Excellent meat dishes are also available, cooked with the same attention and passion, a sign of a versatile and well-rounded cuisine. The atmosphere is refined yet welcoming, and the service is attentive and friendly, always ready to recommend the perfect pairing with wines from the truly well-selected cellar.
A perfect place for both a romantic dinner and a special evening with friends. An absolute guarantee: I will definitely be back and recommend it without hesitation!

Opera d’arte
Oltre al cocktail creato dal barman e ispirato alle opere di Dorian Gray, ecco un’altra opera d’arte uscita dalla cucina di Enza. Provare per credere, prima una delizia per gli occhi e poi una delizia per il palato.
