We were guests at the property, and despite the apparent heat, we ventured to sit in the cloister.
It turned out to be an enchanting place with a very pleasant breeze.
The excellent food and amazing service, which we already knew, completed a super enjoyable evening.
5 stars because there aren't 6.

A typical, unpretentious restaurant located in the stables and cloister of the old bishop's palace. The atmosphere is rustic and welcoming, and the lady who welcomes and serves guests is extremely kind.
There's an extensive wine list, but even the house wine is delicious. The dishes are simple and carefully prepared, with local ingredients, and the pasta (the classic bigoli) is expertly homemade.
The signature dish is "bigoli with donkey ragù"... I preferred the excellent ones with bottarga and shrimp. (Eating donkey seems like an act of cannibalism to me, given my close relationship with him.)

The place has a very high echo and increases the noise from the tables, otherwise it is quite interesting as a vision. The food was average, except for the Fiorentina steak, which was excellent. The service was nice. The draft wine was nice.

Amazing!

I stopped here for lunch: the restaurant is rustic, serving traditional cuisine. It's spread across a single dining room, making it spacious and, despite this, not overwhelming. Unfortunately, the atmosphere is a bit gloomy, being located beneath the castle.
The portions are reasonable, and the wine list is well-stocked; the staff is friendly.
The wine bar has proven to be cutting-edge, offering online and on TheFork reservations.
