Second time in this “restaurant not restaurant” and I witnessed two different sensory experiences!
The first one (Ayahuasca) I can only give a 10 with honors: stimulation of the 5 senses and umami far beyond what can be described to the point that during the end of the experience through the sweet and a voice in the background I got emotional and cried.
Second experience (Artificial stupidity) slightly less positive as I did not have the same emotions: perceived more as a discovery and an experience related to food: but still my vote is 8 1/2
I can only say that once in a lifetime you have to try certain experiences: I remain more and more intrigued by what can come out of the head of the “chef” Federico and I wait enthusiastically to live another experience

Special evening at Sensorium.
Very difficult to convey the sensations and emotions that this experience gives.
It must be experienced, period.
Nothing traditional, usual, known.
Here they "invent" the ingredients that are NOT used.
Behind the final result there is an accurate and deep study of food chemistry, gastronomic history and excellent productions.
The making of some dishes, above all "clams with spaghetti" and the "fake miso anchovy", is obsessive and very demanding with amazing results.
If you want to go back to something more "traditional" there is the monkfish with anduia and black lemon which in my opinion is amazing!!
The environment is minimal but very convivial.
Very engaging and never banal musical compilation, lights, scents, the cell phone to call the AI, the "screw it" dessert to compose.... and the final bread and ham are unforgettable.
The owner and chef Federico Rottigni accompanied by the very kind Lara are a source of interesting news and anecdotes that make the evening very pleasant.
The service is impeccable, as is the alcoholic pairing that allows you to appreciate absolutely amazing "liquids".

Do not expect anything. Just go and enjoy. You can take it seriously or super lightly and with fun. Up to you and your party. The staff will accommodate you and will not enforce any opinions. It's up to you to decide what's going on. I was impressed with hight quality ingredients. I also appreciate the creativity and the element of surprise. My party left absolutely satisfied. I encourage you to have a chat with the staff at the end. It's the people behind the experience that make it last forever. Hope you'll give it a go! We will be back one day :)

Sensorium is not a restaurant, Sensorium is a theater where food also plays an important role but is only a part. It is a true sensory experience with lights, sounds, scents and food that integrate harmoniously. We will be back soon!

A very unique and interesting experience, the food was nice and very different, the whole dinner is like a theatre show with lots of fun surprises along the way. A bit expensive but worth a visit if you want a truly unique experience

Questo è il titolo dell'esperienza sensoriale vissuta presso questo ristorante. Ristorante è riduttivo perché sembra di stare a teatro.
Il cibo è eccellente con prodotti di ottima qualità ma è l esperienza stessa che rende la serata unica. Luci, suoni, musica e , spiegazioni della brigata guidano, coinvolgono e stupiscono. Si rimane affascinati dalla creatività di questo piccolo gruppo di giovani che riescono a elaborare un percorso così ricco di fantasia e emozioni coinvolgenti

Esperienza unica. Iniziamo col dire che il locale è per pochissimi commensali, mi sembra 10 sia il numero massimo. La sera in cui siamo stati eravamo 8, pertanto siamo stati serviti da 4 chef/camerieri che si sono occupati di noi con un rapporto di 1:2. Questo ci fa già capire l'esclusività del posto e l'attenzione che viene fornita al cliente. La qualità del cibo servito è spaziale, ma l'esperienza non è solo culinaria. La serata è condita da musiche, luci e odori particolari incentrati sul tema della cena. Nel nostro caso il percorso sensoriale è stato quello della "Ayahuasca", lo chef Federico riesce a coinvolgere i commensali nella cena con le sue spiegazioni e ci si immerge completamente nella storia. Al termine della cena c'è la possibilità di fermarsi con lo chef ed il personale per una piacevole chiacchierata riguardo all'esperienza vissuta.
Il prezzo è, ovviamente, molto elevato ma vale l'offerta proposta dal locale.
Consigliato per una serata diverse da tutte le altre.
