A meal that started strong and only got better with every course. Fresh oysters opened the evening - briny, cold, and perfect. The sides were anything but an afterthought: golden roasted patate al forno that tasted like home, only better. Then came the showstopper - Wagyu steak, presented raw like a piece of art before hitting the grill. Cooked to perfection, it melted like butter. Paired with a bold red from Alba, the kind of wine that speaks its own language, every bite felt rich, slow, and completely indulgent. A dining experience that didn’t just satisfy - it lingered.

17/05/2025: Located in the heart of Pinerolo, Trattoria Zappatori confirms itself as one of the most refined and surprising realities of the Piedmontese gastronomic scene. With a well-deserved Michelin star, this restaurant succeeds in the non-trivial feat of combining the profound identity of traditional cuisine with the courage of innovation. Our experience for my birthday with the “Breakfast for work” tasting menu (with the addition of some off-menu items) was a brilliant demonstration of this philosophy. From the small initial amuse-bouche to the final dessert, the path is coherent, without excess, but with flashes of originality that surprise and stimulate the palate. Particularly noteworthy was the first course, where the tradition of fresh pasta was combined with a sauce with unexpected nuances, a perfect balance between comfort food and research. The environment is elegant but not excessively formal, with an authentic warmth that immediately puts you at ease. The staff is attentive, friendly and well-prepared in guiding the guest through the proposals of chef Christian Milone, whose touch is perceived in every detail, from the plating to the balance of flavors.
