22/03/2026: Excellent service, worthy of a Michelin-starred restaurant, truly delicious cuisine made with top-quality ingredients, and a superb wine selection for all budgets, with excellent quality from the cheapest to the most expensive. Recommended for a romantic dinner or a dinner with friends for important events, the quality is truly excellent.
22/01/2026: The focus on lactose-free options was excellent, but the main courses were disappointing.
I visited Dispensa in Foggia, curious about this new place for me, having not lived in the city for years. The experience was a mix of positives and decidedly subdued aspects.
The caramel and salted peanut cheesecake deserves a special mention: finding a lactose-free dessert this good is not a given, and I thoroughly enjoyed it. The patatas bravas with peel and rosemary were also very good.
The other courses, however, disappointed me:
Scrocchiarella: being intolerant, I asked for the burrata to be removed and if it could be replaced with something else, but I was told there was nothing available. I felt like I'd put the person taking the order on the spot, and while it was a nice idea, without an alternative, the final taste was a bit bland.
Tuna tataki: the plating is nice, but the corn-crusted breading was so overpowering that it completely covered the flavor of the tuna. A shame, because I was excited to try it.
Fassona beef tartare: the sorest point. I'm used to bright red tartare; this one was dull (I've attached a photo), and the flavor was covered by the tomato crumble. I wasn't convinced by either the perceived freshness or the quality of the meat, which seemed almost camouflaged by the breading.
Overall, the concept of the place is very nice, but for the price (including a €4 amaro), I expected a more refined balance of flavors and more prominent ingredients. I hope this provides useful feedback for improvement.
