I had the pleasure of dining at this restaurant serving traditional Roman cuisine, and the experience was truly authentic and satisfying. I started with the artichokes, impeccably prepared: flavorful, tender, and well-seasoned, just as tradition demands. Next, a carbonara that deserves a special mention: perfectly creamy, with a perfect balance of pecorino, egg, and crispy guanciale. The care taken in selecting the ingredients and the respect for the original recipe are clearly evident. The highlight of the evening, however, was the oxtail stew: rich, intense, and slowly cooked, with a full-bodied, flavorful sauce. A true explosion of flavor that embodies Roman tradition. Friendly service and a welcoming atmosphere complete the picture (special thanks to Johnny, who accompanied us on this journey). A highly recommended place for those who want to savor true Roman classics, prepared properly.
