A must-see at the central market, I recommend taking the lampredotto panini, it's the specialty of this historic brand. The taste is surprising but it's good with the sauce. On the other hand, be careful there is a queue and very few seats.

What is Fiorentinity? It's a question I often ask myself and perhaps I'll never find a definitive answer, but my research leads me to places and flavors that are its essence. For me, Fiorentinity also manifests itself in a simple boiled sandwich. Nestled in the corner of the Mercato Centrale, this very busy deli counter is not one to miss!
The staff clearly enjoy their work, as they seemed very happy as they greeted people whilst slicing bread and meat with quick precision and ease.
As recommended by others I ordered the lampredotto and it was absolutely delicious and considering how many amazing sandwiches there are in Florence, this is certainly one of the best.
It's at the corner of the first floor of the Central Market. When you arrive, you pay first. Beef buns and tripe buns cost 5 euros each. Then go to the right row to wait for your meal. The boss is very quick and will ask if you want spicy and tomato, and how much. It’s not a small amount, so it’s recommended to share it.
The bread part feels a bit hard. Although it has a good texture, I feel a little bothered after biting it for a long time. The beef and tripe are of good quality and don’t feel old or chewy, but the taste is okay. The seasoning is a bit bland, so it’s slightly chewy. Spicy can be added spicy
There are seats available to sit on the side. Please remember to clean up after eating.

Molto sporco intorno alla zona dove ci si siede per mangiare, personale che tocca senza guanti il cibo e il denaro, non il massimo per l'igiene.
Panino con stracotto e con bollito buoni, patate mediocri.
Cibo non pessimo, ma nulla di trascendentale.
Prezzi accettabili.
