The place wasn't very clean. Maybe because I arrived after peak hours. The traditional sandwich didn't deliver what it promised, but the price was quite reasonable at €5.50. The house wine was reasonable, also reasonably priced. I wouldn't go back; it was a worthwhile experience to try the traditional sandwich, but I didn't like it.

In conclusion, the tripe bun was my favorite. The beef bun wasn't as amazing; the meat wasn't as tender. There's no need to order a plate of tripe and beef with bread, because the panini with tripe is much better than the other type of bread. The tripe bun and bread are a perfect match, with a super balanced flavor. The red and green sauce I chose was a great complement!
I ate here twice during this trip, and I highly recommend trying it. The last time I ate here was eight years ago, and I've been craving it ever since.

The plate version was good, but when I asked for lampredotto, they brought out the one sandwiched between bread. 5.5 euros.
It's delicious. What is this? It's delicious.
You might think, "Motsu on bread?", but it's a Western-style dish.
The plate version is probably better called "piatto."
There are photos from old Japanese travel magazines on display.
When they find out I'm Japanese, they mutter "motsu, motsu" (offal, offal).

The tripe was incredibly tender. Although the sauce wasn't fully absorbed, the tripe itself was already delicious enough.

The young male staff member asked me where I was from and then told me about gopchang and suyuk in Korean. He was very kind👍
Make sure to add the spicy sauce! The gopchang was so soft, it felt like I was eating only the intestines of Yangpyeong Haejangguk. I was like, wow!!

The meat and tripes were sooooo good. The risotto de mare was also excellent! Price is reasonable for being in the centre of Florence but seats may be a bit tight. 10/10 will eat again. Don’t be intimidated by the queue as it’s a moving queue.

Che dire mi sento fortunato di far parte di quelli che sono riusciti ad assaggiare lampredotto e stracotto direttamente fatti da lui! Gentilissimo e simpaticissimo, ho fatto pure un video e oggi che sono tornato per la seconda e purtroppo l'ultimo volta visto che partivo, anche 2 chiacchiere sulla storia del nome Nerbone! che dire sono fortunati fiorentini ad avere questo splendido posto! Invidia!
