What wonderful regional cuisine! We enjoyed these wonderful chicory ravioli stuffed with rabbit, enhanced with thin strips of marinated fennel, tagliatelle with rabbit ragout sprinkled with olive oil, and finally, vanilla ice cream with a strawberry center baked with a strawberry coulis and topped with lemon olive oil (a delight 😋). We also enjoyed the kumquat agretti.
The welcome was friendly and very efficient. Thank you for all the explanations.

A Hidden Gem in Umbria – A Culinary Delight!
We stumbled upon Ristorante Gregorio quite by accident while en route to Castello della Sala vineyard in Umbria, and what a fortunate detour it turned out to be! From the moment we arrived, we were treated to an unforgettable dining experience that was both authentic and full of heart.
The food was nothing short of exceptional. Every dish featured locally sourced ingredients—succulent wild boar, tender rabbit, perfectly cooked steak, and herbs fresh from their own garden, all brought together with their own olive oil. The flavours were bold, rustic, and true to the region.
A special mention must go to Davide, the sommelier, whose knowledge and passion for food and wine elevated the experience even further. His handwritten wine list was a charming touch, and his pairing suggestions were absolutely spot on. It’s rare to meet someone who delivers their recommendations with such genuine enthusiasm and depth.
We originally came for lunch, and were so impressed that we returned two days later for dinner—both times equally memorable. It’s not often you find a place that leaves such a lasting impression, and we’re so glad we found it by chance.
A well-deserved 5 🌟 from all of us. We’ll definitely be back when we return to Umbria next year. Grazie mille, Ristorante Gregorio!

Visiting Da Gregoria is an experience in service, hospitality and outstanding cuisine. Davide, our server and sommelier described all food offerings in incredible detail with flexibility to try many courses. The food is all seasonal and locally sourced. The wine matches are unique and thoughtful. The food preparations are flavourful and well presented.

From the outside, the restaurant looks like a typical country trattoria... but inside you surprisingly discover a high level of cuisine and service, not to mention the completely glassed-in room overlooking the valley. The table service transmits passion at every moment, both in terms of customer service and in the explanation of the dishes. Each dish is well thought out, in particular we were amazed by the desserts, truly excellent and unique. Our compliments also to the sommelier who was able to perfectly advise us on the wines to pair with the dishes, thank you again!
We hope to come back to visit you soon, we felt truly pampered thanks to the excellent food and impeccable service.

Had an amazing experience. Food, wine, and service were all excellent. We were coming into Umbria from the coast and were looking for a place to stop along the way. This place was highly recommended and it exceeded our high expectations.
Well worth a trip for lunch (and I imagine dinner as well).

Mi sono recato in questo locale assieme alla mia fidanzata mentre eravamo di passaggio in zona al rientro da un week end in Umbria. Il ristorante sorge lungo la strada provinciale in localita' Morrano Nuovo, una frazione di Orvieto immersa nella campagna umbra. I tavoli sono affacciati su una meravigliosa vetrata che offre una splendida vista sulla campagna circostante. E' stata decisamente una fantastica scoperta quasi del tutto inaspettata: ottima la cucina, fantastica la vista ed eccezionale il servizio. Consiglio a tutti di iniziare con degli ottimi antipasti, tra cui spiccano l'ottimo Tagliere di Salumi e Crostini di Pate' Umbro, il Crostone con Lardo e Confetture e le verdure dell'Orto Quotidiano, coltivate direttamente nel piccolo orto all'interno della proprieta'. Tra i primi imperdibili gli Gnocchi al Pesto di Erbe Spontanee e soprattutto gli Umbriachelli al vino Rosso con Salsiccia e Cipolla Rossa, una vera squisitezza. Tra i dessert davvero buona la panna cotta. Infine da segnalare la bravura dell'ottimo sommelier che di portata in portata segnala i vini migliori da accompagnare, dall'antipasto al dolce. Prezzi leggermente sopra la media ma qualita' indiscutibile: assolutamente consigliato !!!!!!!!!!!!!
