Excellent service and food was great. Fusion of Japanese and Tuscan. The space was small but comfortable.

Great traditional Tuscan food, with the master touch from Chef Picchi who created this Trattoria. Very unique dishes from Firenze culinary tradition, improved by a great touch of creativity/ but just enough to preserve the original recipes. Great staff, all waiters speak great English… you will greatly enjoy. I am a chef myself and I was born in Firenze, you can trust 100% my comments!

Florentine institution to try at least once. I was hoping to find stuffed chicken neck but no way... Maybe next time! Very Tuscan à la carte menu with many off-menu items listed verbally. We stuck to the classics by ordering the white tripe and the liver crostini with raisin and fennel bread: both excellent even if I prefer the crostini less buttery and more rustic. As a second course, the chicken and ricotta meatballs (a slightly small portion, designed more to mop up with bread than to fill up with meatballs) and the Panizza with chard and stracchino (beautiful garlicky chard just the way I like it :)). Nothing to say about the taste: everything tasty and cooked to perfection. The panna cotta is unmissable! The head waitress was really pleasant to deal with. Wines by the glass were not particularly satisfying and were served without bringing the bottle to the table. Final bill was correct for the history and location (€107 with 5 glasses of wine).

I ate alone in this historic restaurant.
The place is very beautiful, it has an old-fashioned feel. Two small rooms, spartan tables with placemats and very kind staff.
I didn't eat much because their proposal is different from what I wanted for dinner. In addition to the dishes on the menu there were also dishes of the day such as stuffed duck neck and fresh broad beans with pecorino.
Beautiful place and their ribollita-type soup is excellent

Memorable experience in one of the most famous historic trattorias in Florence, immersed in a truly suggestive and authentic area, where every corner smells of tradition. I don't have photos to show, but the flavors speak for themselves.
I had the pleasure of tasting the tripe in two versions - also the tripe salad, very fresh - and the homemade liver paté, which deserves a special mention: without a doubt the best I've ever tried, served separately from the bread, in a small, carefully prepared dish. A simple but impactful detail. The first courses were also excellent, cooked with a sure hand and respectful of tradition.
The service was one of the strong points: I love it when the waiters are local, know the raw materials well and describe each dish with passion and competence. You feel part of something real, not just a customer.
Everything was really excellent, genuine, Tuscan to the core. I will definitely be back.

Truly traditional Tuscan dishes, small selected menu (which I appreciate and love), there was no pasta dishes the night we went, which shows the traditional Tuscan food. We have tripe stew, Lampredotto, pork loin. Everything was good. Make a reservation!

Our experience at Cibreo was excellent.
The food consisted of interesting, authentic dishes. From talking to our server, it is a small restaurant serving the same food that the original owner was used to eating in his home in Tuscany.
We would recommend this location to anyone trying to experience something different from what other restaurants in the area have to offer.
Notably, the prices are more affordable than many restaurants in the area.

Il Cibreo
35 años es mucho tiempo... pero escribí vívidamente en mi diario sobre la increíble comida que mi amigo y yo tuvimos en Il Cibreo en marzo de 1990 cuando tenía 35 años. Regresé 35 años más tarde, anticipando una experiencia culinaria similar, pero estaba algo decepcionado.
Il Cibreo me parece un restaurante muy concurrido y de buena calidad que se duerme en los laureles. Su personal era agradable y profesional, pero apurado y no interesado en conectar conmigo y mi marido como comensales. Tuvimos que pedir que se rellenara nuestro vino, y nadie se molestó en rellenar nuestra agua. Nos sentamos con nuestra ensalada sobrante durante cinco minutos antes de que pudiera llamar la atención de alguien para quitarla. El servicio fue brusco a veces, y tomó más de diez minutos después de que cortésmente pedí “il conto, per favore” y puse mi tarjeta de crédito en la mesa, para finalmente obtener nuestra factura. Y por cierto, a pesar de que había pedido la factura y tenía la tarjeta de crédito en la mesa junto a mí, la señora finalmente puso “il conto” junto a mi marido. ¡Habla de sordos!
Mi alcachofa vegetariana y plato de patata era muy bueno, pero mi marido dijo que su preparación de pargo estaba bien, pero no memorable. No terminamos el aperitivo de carpaccio de pez espada. Todos nuestros platos todavía tenían comida en ellos, pero ninguno de los servidores nunca nos preguntó si estábamos satisfechos con los platos.
Esta fue una cena de cumpleaños para mí y una que había esperado con ansias, así que coloréame decepcionada. Después de cenar ayer en La Leggenda dei Frati, que fue fantástico, este restaurante ya no merece su estrella Michelin en mi humilde opinión.
