Tuscan restaurant. Busy but quiet, except for the owner constantly moving between the kitchen and the dining room, loudly calling out the dishes. The waiter was quick and friendly. The appetizer was a fairly good panzanella, but compared to the ones I'd eaten in Tuscany, it lacked a bit of flavor. The Maremma ravioli were filled with very dry and slightly strong ricotta, sautéed with very oily and not very crispy guanciale. I think their restaurant's signature dish is the meat, but I didn't order it. Having not had a full meal, I can't judge their cuisine, but I would advise the large owner to be a little less omnipresent and, above all, to not scratch his back by lifting his shirt while talking to customers while less than a foot behind him are people eating. Not very elegant. Recommended? No...
