Nice place, located in the central square of Gressoney La Trinitè. I stopped for an aperitif, substantial, because it was too early for dinner. I took the grand Tagliere: 3 types of local cheeses (a blue from the valley, the sheep's brebis and a cow's milk cheese) and three cured meats (always local: venison salami, l'arco d'arnad, moccetta) accompanied by an excellent artisanal jam, plus a local artisanal beer and an espresso for €35. The price is high but the quality of the products, and the quantity on the platter justify it. I was served by the owner who explained the products to me in detail and was very kind.

Castore & Polluce was the heart of our lunch in Gressoney: a charming place divided into three areas (terrace on the square, lounge bar and private room). We went at midday and the lunch hour (12:00–14:30) was managed perfectly, with a modern menu based on local ingredients.
The wine selection is incredible and you can choose directly from the cellar by looking around, as well as from the menu. The food was refined, tasty and well presented, with creative hints on mountain classics (polenta concia, fondue, Valdostan meat tartare).
The atmosphere is young and refined, and the attention to detail—from cleanliness to courtesy—made the lunch even more enjoyable. A must if you are in the area: enchanting view, quality cuisine and a stunning cellar.

Restaurant in the heart of the town square, very very beautiful, excellent cuisine and view of the mountains, perhaps a little expensive but all the dishes I tried were excellent, I will return.

Wonderful restaurant in the centre of Gressoney la Trinité. The tagliere was delicious and complete with all the delicacies of the place, including mocetta and lard from Arnard. The wine list depends on the season, and the staff was super helpful and recommended amazing wine. The landscape and view are spectacular. Highly recommended.

Excellent restaurant, friendly and knowledgeable staff in explaining the wines and dishes. They don't have a wine list but they take you directly to their cellar to choose which I think is a strong point... Particular menu, perhaps I dared to choose the rice creamed with beetroot and prawns which in the long run I wasn't able to finish, the top quality ingredients are noticeable. The platter of local cheeses and cured meats is excellent! All in an atmosphere that is not too serious and makes you feel at ease throughout the dinner.
