Castore Lounge Bar & Restaurant In Gressoney-la-trinitè

Excellent restaurant, friendly and knowledgeable staff in explaining the wines and dishes. They don't have a wine list but they take you directly to their cellar to choose which I think is a strong point... Particular menu, perhaps I dared to choose the rice creamed with beetroot and prawns which in the long run I wasn't able to finish, the top quality ingredients are noticeable. The platter of local cheeses and cured meats is excellent! All in an atmosphere that is not too serious and makes you feel at ease throughout the dinner.

One of the best meals that as a family we have had, an amazing evening. For somewhere so unassuming, in fact we stumbled on it by chance (thanks goodness we did), it delivered beyond any expectations. Having arrived a little early for our table we had cocktails which were amazing and a wonderful precursor to the main event. At our appointed time Paolo took us through to our table, timings important as Paolo gives each table his full attention, and clearly explained the menu and the choice of wines to accompany our choices. The delivery of the information was done in a very non obsequious way, in fact it was fascinating listening to someone so passionate about their trade. The food was divine, octopus, steak tartare, pork belly (cooked for 24 hours), tuna and venison ribs, truly a fiesta of flavours accompanied by wonderful complementary wines suggested by Paolo. If an excuse was ever need to revisit the Gressoney area Castor & Polluce is it, along with some great skiing. Thank you Paolo and team a special evening that will be remembered for a long time to come.

A spectacular lunch... we will definitely be back also for the service and courtesy since we were a little early for the catering service time. The dishes served were very beautiful and cared for both in taste and in an aesthetic sense.... the temperature and cleanliness of the place were top... a sunny day, a walk on the road taken by the snowcat and then a lunch with friends... The only dominant restaurant on the small main square of Gressoney La Trinitè. The right rustic setting, pleasant atmosphere and lights. Spacious. Dishes with discreet creativity on the theme of local and seasonal products. Rich cellar and extreme attention to the wine pairings, which are excellent. In my opinion a little too expensive and pretentious for the location which has a predominantly sports tourism of mountain enthusiasts.

La prima volta siamo "capitati" per caso in questo bel locale. Ci siamo trovati così bene che siamo tornati, stavolta per scelta consapevole. Tutto ottimo, anche il servizio. Non vediamo l'ora di tornarci.

Whilst skiing in the nearby resort we booked onto the wine tasting (via Crystal Ski) and having done 2/3 before was looking forward to it. A lovely welcome by Paulo who runs this lovely place with his wife; they are both sommeliers. This was the best experience of wine tasting by far; great to understand and able to ask questions as you go along….. great for anyone so don’t be put off at all as no pretentious pomposity!!!!!! (€30 each) Brilliant absolutely brilliant!!!! We also stayed on afterwards for a fantastic dinner, with wine of course……. and then drinks, all of which wasn’t cheap and meant we didn’t ski until late, the following day but well worth it👍

Being in such a small town but rich in history, I didn't expect to find a place so modern and at the same time perfectly integrated with the traditional atmosphere of the place. Castore & Polluce is a pleasant surprise: an incredible variety of drinks and truly attentive and friendly owners. It has become the meeting point of the town, and seeing the lively atmosphere created on a cold November day is a joy for the eyes and the heart. Highly recommended!
