Small trattoria in the center of Parma.
Good dishes with simple ingredients, except for the desserts (gelato and panettone), which I didn't appreciate.
On a negative note, the restrooms were not particularly clean.

Brisla is a trattoria in the center of Parma, on the edge of the limited traffic zone. A trattoria by name, but a trattoria is my definition, because it's the first thing that comes to mind when you walk in the door.
For the way the place presents itself—understated and elegant, everything new, nothing old—for those seats at the counter overlooking the kitchen, for traditional dishes brought into the third millennium in terms of the choice and care of the ingredients, the storytelling and presentation, and the intensity and balance of the flavors.
My grandmother used to make the ragù with eggplant, the tagliolini di Brisla are a wonderfully modern interpretation, the rice bomb and the horse carpaccio are quintessential Parma dishes and don't belong to my Bolognese memories, but I loved them dearly. And the same can be said for everything else...
The wine list focuses heavily on Italy, and especially Emilia, with many small rarities that are irresistible.
Vigna Cunial's Monteroma has changed its label and name, now called 𝐕𝐨𝐥𝐭𝐚 𝐚𝐥 𝐒𝐨𝐥𝐞, while still remaining enchanting: the Foradori's 𝐋𝐞𝐳𝐞̀𝐫 is intense and velvety, the 𝐌𝐢𝐧𝐢𝐞𝐫𝐞 from Cantine dell'Angelo is a blade of freshness scented with minerality. The 𝐕𝐞𝐧𝐭𝐢𝐬𝐞𝐢 Pinot Noir from Azienda Agricola Il Rio boasts a magnificent nose, with a flavorful presence that certainly doesn't deny its Mugello.

These young men move around, creating emotions in this delightful location. All dressed in white, smiling, kind, the menu is extremely interesting, the duck is unrivaled, attention to detail, and the ingredients are top-notch. Excellent wines. Addition: decidedly modest.

A modern trattoria located in the center of Parma. The atmosphere is refined and the service excellent. We were treated with exceptional care, both in our food and wine selection. The dishes were beautifully executed and rich in flavor. A must-try if you want to experience traditional cuisine with a modern, technical twist. Well done!

My first taste of Emilian cuisine at Brisla Trattoria in Parma was a delight! The restaurant’s vibe is warm, cozy, and authentically Italian, creating a welcoming atmosphere. The dish presentation was decent, but the flavors truly shone—bold, balanced, and bursting with regional character. The standout was the bomba di riso con piccione, a unique dish with tender pigeon encased in perfectly cooked rice, delivering a rich, unforgettable taste. Every bite felt like a celebration of Emilia-Romagna’s culinary heritage. The staff and chef were friendly and attentive, enhancing the experience with their genuine hospitality. Brisla Trattoria is a gem for anyone craving an authentic and flavorful introduction to Emilian cuisine. Highly recommended!

Great Emilian food with very good open wines. We've had a tasty lunch. Only hiccup was that we needed to wait quite some time for the dessert for my girlfriend while I've already got mine. The waiters spoke good English which made it even easier for us to feel comfortable.

I visited with my family. My daughters loved it. The staff were very friendly and took our orders in English. The food was just as delicious as the photos show. It's a popular restaurant, so be sure to make a reservation.

Interesting place, the menu is very lean (which is a big plus for me, not too many choices helping to choose faster), but as well very interesting and tasty. Portions are just right. Stuff is kind and welcoming. Not a typical Parma cuisine. Would recommend the horse carpaccio and the stuffed quail.

A delicious restaurant. I recommend the agnolotti, among the best I've ever had. They're incredibly flavorful, and I thought the pumpkin paired perfectly. The decor was very nice, rustic yet elegant. I highly recommend them if you're in Parma!

VENUE: Really well-decorated. I really like the look. There are two small dining rooms on the first floor.
FOOD: Refined and carefully prepared dishes. Portions are adequate: two courses plus dessert are filling.
The meats are really well-prepared.
STAFF: Friendly and knowledgeable. I must say, however, that there were times when the service was slow.
LOCATION: Being practically in the city center, parking isn't easy unless you use the nearby paid parking lots (I recommend it).
Prices are medium-high, but I'd say they reflect the dishes and the preparation.
