There's nothing to complain about the pizzas themselves, but unfortunately, the experience was disappointing in several other respects.
The thing that left us most perplexed was that, for practically everything we ordered, from appetizers to pizzas, some ingredients were missing. It wasn't a single item that ran out, which can absolutely happen, but rather a recurring situation for almost every course we ordered.
Precisely for this reason, it would be nice, and above all appropriate, to inform customers from the beginning which ingredients or dishes are unavailable, before having them choose from the menu and having to point out the various missing items one by one when ordering.
One of the pizzas had truffles on the menu. The waitress informed us that it was out of stock, and we decided to order it anyway, especially since by that point we'd already noticed missing ingredients on several other orders. When it came time to pay the bill, however, the pizza was charged at the same price as with truffles, despite the fact that one of the main and presumably most expensive ingredients was missing.
Add to this the approximately 40-minute wait just to place your order. Considering the number of seats and the volume of work the restaurant handles each evening, perhaps an extra person dedicated to taking orders would really make a difference.
It's a shame, because the pizzas were good, but finding ingredients missing from virtually every dish ordered, without being informed in advance, along with such a long wait and no price adjustment, inevitably ruined the experience.

A unique experience.
Impeccable and very friendly service.
As for the pizzas and desserts, I think it goes without saying that they are of excellent quality, with flavor combinations that pique your curiosity when you read them on the menu, make your eyes widen when they arrive at the table, and explode in your mouth when you eat them.
Shall we talk about the paper menus?
I don't have a photo, but they are out of this world.
The atmosphere was relaxing, and the service was incredibly fast.

The pizza is delicious, on par with the best in Italy, and the desserts are sublime. I've never tasted anything like it. My compliments, truly.

Given the panic attack that comes with booking and the place's military-like rules, once we arrived we expected excellent service. We waited an hour and a half, and the dishes didn't even arrive together (which might partially explain the wait). As for the pizzas, they're a bit hit or miss: some are very good, others drowned in oil or overall very heavy. The feeling is that the place wants to flaunt a "high-end" status that it doesn't always manage to maintain, and that the sense of exclusivity is more contrived than real.

To book, the website is often unavailable and difficult to book.
You have to confirm your email twice, and if your email goes to spam, you lose your reservation.
I managed to book after two attempts.
Nice place. They value the local area, highlighting local products in their pizzas. They have a very Slow philosophy, but at the table, the water is just cream and San Pellegrino, a Michelin-starred wine, rather than the Mangiarella, a top ten in European waters... (Oh well!). The staff is top-notch, but they don't know much about leavening and the differences in pizzas, the grams of dough and flour (Petra), and the W of humidity... Oh well, I'm asking too much.
Pizza without cutlery! Ok! Ice cream without a spoon! Ok!
Good philosophy, excellent pizza... (You often find forks even in the best Michelin-starred Japanese restaurants in Japan! Oh well!
Everything's ok, of course, but often you could get a little courtesy or a little pampering after water, pizza, and dessert. Total: €28 per person.

All the negative reviews are disproved: true excellence!
I must admit that at first we were a little put off by the negative reviews, but we changed our minds after just 10 minutes. Many complain about the lack of "flexibility," but with us the staff was super kind, warm, and impeccable.
The various doughs are simply exceptional, and the toppings, of incredible quality, are paired divinely and deliciously.
As someone who works in the industry, I want to say this: if we had to indulge every single whim of those who demand everything just because they pay, we would be disrespecting our own work. Kudos to Bob Alchimia a Spicchi for managing to implement this system: all restaurants should follow suit!

The only problem was the reservation, which was difficult, especially for tables with a child. The quality of everything we ate was far superior to expectations; perhaps I would have enjoyed the experience more if the restaurant hadn't behaved like a Michelin-starred restaurant (in terms of the staff's attitude). The physical menus are beautiful, but it's a bit confusing that there's a QR code on the table that leads to a menu that doesn't exist online. Only after an initial moment of confusion was the waiter clarifying that the menu was only available online (while the drinks menu was only available online). It would be helpful, especially on the online menu, to include photos of the dishes listed, as it's sometimes unclear how large the items are. However, I recommend everyone try this experience; your taste buds will greatly appreciate it.
