03/11/2025: We went to Bites for a family dinner and the experience was truly top-notch. The restaurant is small, meticulously maintained, and has a super contemporary atmosphere. The dining room staff is delightful: knowledgeable, attentive without being intrusive, and very helpful. For tables of more than four people, there's a fixed menu: you choose only the number of courses (we opted for five Bites), but not the dishes. A very positive note: great attention to allergies and dietary restrictions is paid. My brother is vegetarian and doesn't eat tomatoes, and the kitchen adapted everything with great professionalism. The gastronomic journey is meticulously crafted: technical dishes, bold combinations, and Asian influences—especially Japanese—that blend well with Italian tradition. Perfectly cooked, the flavors are balanced and not overpowering. However, it's important to keep in mind that you're completely relying on the chef: we had two appetizers with raw fish, a first course with veal heart ragù, and a second course with veal tongue. For those who don't like certain dishes, it can be challenging: it's best to inquire beforehand, and I'd perhaps recommend that the restaurant inform their guests in some way. Regardless, I enjoyed everything. The wine list was very interesting: we chose a minerally Australian still white, unusual but truly excellent. If I had to find a small, less brilliant note: the desserts weren't as surprising as the rest of the menu. Recommended for those seeking a different and out-of-the-ordinary gastronomic experience.

03/10/2025: Interesting dishes - some excellent, some "bold," but all good. The wine is good. The atmosphere is lovely and the service is excellent. A little pricey, but otherwise it would be 5 stars.
