25/04/2024: We had the pleasure of having dinner at Tortelleria Aut in Cavriago before an evening at the cinema. The restaurant is located in the main square of the town; to reach it, you have to take a small street on the side of the square that leads to the entrance. The interior has a typical atmosphere of village trattorias, enriched by refined furnishing details: the environment is clean and comfortable, with wooden tables and chairs. The type of mise en place is simple, with a small runner, cutlery and napkins positioned in an original and oblique way.
As first courses we chose cappelletti stuffed with truffle and parmesan cream, and tortelloni with squid ink stuffed with salmon and tomato sauce. In both dishes, the pasta was at the right consistency and perfectly cooked: the filling of the cappelletti, delicate with pieces of black truffle mixed with ricotta, was delicious, as was the parmesan cream that accompanied it. In the tortelloni, the strong and predominant flavor of the salmon harmonized with the light saline note of the squid ink in the pasta, all wrapped in the tomato sauce which gave a light acidity to a truly excellent dish.
As a second course we tasted a dish of battered and fried cod: the fish, with a delicate flavor and well cooked, was balanced and not excessively salty. The batter was perfectly crunchy, accompanied by an exquisite quenelle of olive pesto, which went perfectly with the softness of the fish.
We concluded the dinner with two desserts: a mascarpone cream with chocolate flakes and a slice of sbrisolona cake, both delicious and full of flavour.
The service was fast and extremely courteous. We certainly recommend this restaurant for a quiet, quality meal, both for lovers of Emilian cuisine and for those who want to discover other Italian specialties.
