19/10/2025: When you enter La Pergola in Bedonia, you enter a world of serenity and style, somewhere between the English, consolidated in a refined and elegant setting, and the tangible Apennine mountain atmosphere, made of ancient recipes reworked with delicate and captivating innovations. All this is coordinated by a wonderful Signora Betta who welcomes, accompanies, and interprets the wishes and expectations of each fortunate guest. The attentive and courteous service leaves no room for error, always discreet and never intrusive, but punctual. My wife and I sampled the truffle menu, ranging from a superb chestnut soufflé with truffle, to ravioli with saffron and truffle, and purple rice with gorgonzola and truffle. When we reached the main course, slices of succulent roast beef accompanied by a delicate sauce with shaved truffle and a delicate potato rosticciata served as a prelude to a delightful and refreshing coffee mousse, meringues, and the aroma of truffle. The raw materials are of undeniable quality, the bill is honest, and it further demonstrates that working in the restaurant business requires love and expertise, as we experienced at La Pergola.
