As a native of Brixen, I always enjoy visiting the Alte Schlachthof (Old Slaughterhouse) when I'm back in my hometown. I previously gave it a 5-star review, as I've always been very impressed with this establishment – see below. The food still meets my expectations, but unfortunately, the service has deteriorated significantly – 2 points deducted.
Update: Yesterday around 5 p.m., I was at the bar and specifically asked for a freshly squeezed juice. I was recommended a carrot-apple-ginger juice. However, the juice I was served was noticeably brown with an unpleasant, slightly bitter aftertaste.
When I complained, I was told that the juice had been "freshly squeezed at noon" and that there was nothing unusual about the taste. This statement left me, as a customer, with a very unpleasant feeling – especially since my companion also tried the juice and, both visually and in terms of taste, it seemed that the product was no longer in good condition.
Update: Furthermore, I could see out of the corner of my eye that the juice jug was sitting unrefrigerated on the counter.
For context: Pressed apple juice oxidizes relatively quickly upon contact with air, which explains the browning. However, if juice is prepared several hours in advance and not kept refrigerated throughout, then in my opinion, it doesn't meet the standards of what a customer would expect from "freshly squeezed." In the worst-case scenario, this could even lead to gastrointestinal issues.
It's a shame – I would have liked to see more transparency, a focus on quality, and a more sensitive approach to legitimate criticism.
Two years ago: A true culinary experience! The beetroot risotto with salmon is an absolute highlight. What truly made the meal unforgettable was Alessandro's attentive service. His friendliness and courteous manner perfectly complemented the lunch. Many thanks to the entire team and especially to Alessandro for this excellent service!

The rooms are basic and basic, without TVs, but still comfortable. The food is EXCELLENT, with generous portions, and is run by young, dynamic, talented, very kind, and very fast staff. Kudos to everyone!!

This is a popular spot for breakfast, even on weekdays. The three of us were there on a weekday, and it was completely full by 10 a.m. So, it's definitely worth making a reservation, even during the week.
A lovely bistro decorated in an industrial style. There are cozy seating areas with armchairs. Overall, very nice and stylish.
The food (breakfast) is generally very good. The four stars are mainly due to the price. The "Alte Tiroler," for example, is an omelet with potatoes and onions, served with some bread. Simply prepared and tasty, but perhaps a euro or two too expensive. The three of us paid just under 50 euros, including cappuccino and prosecco for two.
Oh, and by the way: despite the place being packed, the service was quick and friendly.
