If I were asked to describe what a Restaurant, with a capital R, should be like for me, I would always and only answer Al Ceppo. A place where you can eat every day, whatever you fancy. You are served and revered, not in the unnecessary sense of the word, but in the sense of necessity and duty when you cross the threshold of restaurants of this caliber, something many forget. Al Ceppo is a solid place, forged by the hands, palates, minds, and traditions of a family of Marche origins, now more than Romanized. Caterina is, for me, one of the greatest dining room women in Italy, skilled and empathetic with the customer far more than many of her award-winning colleagues in the world of fine dining. A place where you feel at home from the moment you are escorted to your table. The cuisine is free of artifice and unnecessary sophistication; it offers mostly classic and traditional dishes, occasionally leaving room for a few more imaginative and creative dishes. As for main courses, if you're craving something simpler and less heavy on sauce, the fire is always burning. The diverse wine list, always focused on small producers, now leans even more in that direction, thanks in part to the presence of Federico, Caterina's son, a young wine enthusiast. To round off the meal, top-quality cheeses are always available, along with a thoughtful selection of wines and spirits by the glass. My favorite restaurant in Rome, always and forever.

The lighting is just right, the tables are spaced apart, the tones are soft, and the blazing fireplace adds a warmth that makes the room feel alive, almost domestic, yet always with a touch of sophistication.
The cuisine revolves around the grill, which is the beating heart of the restaurant. You can see it, smell it, and breathe it. The meat arrives at the table with a full aroma and distinct flavor, the result of a cooking process that requires attention, time, and skill. There's no improvisation: the raw ingredients are top-quality, the grill is expertly managed, and the end result is tender and juicy meat, with that light smokiness that lingers in the memory. Even the side dishes follow the same principle of understated excellence, designed to complement without stealing the show.

Then there's that unmistakable Parioli vibe, a trait that's part of the place's charm: ladies of indefinable age, all perfectly sculpted by the same plastic surgeon, and that worldly air that can be fun when approached in the right spirit. It's part of the show, and ultimately completes it.
Al Ceppo is one of those places that makes Rome feel grand and elegant, capable of offering a dinner that strikes a balance between gastronomic pleasure and aesthetic delight. You leave feeling like you've had a full experience, made up of precise flavors, an authentic atmosphere, and impeccable service. The five stars aren't a formal tribute, but rather the recognition due to a quality that can't be improvised.
