I had been wanting to try the famous seven-layer lasagna for a long time. I, an expat from Bologna, consider lasagna the flavor of my childhood. A Bolognese archetype like San Luca. Passing through Bologna with my family, without a reservation we decided to try our luck. Luckily they had a free table. I was the only one who ordered lasagna. The others were tagliatelle with ragù, beef cheek and stuffed guinea fowl.
Well... the tagliatelle were fantastic, the cheek was amazing and the guinea fowl was good. Lastly they served me. I had been blissed out for months with photos of the perfect, colorful and succulent cube of Cambio's lasagna. Instead, I received a lasagna that was drooping on one side, covered in ragù browned by excessive cooking. The overcooking was clearly noticeable in the taste. Tasting the tagliatelle I then noticed the clear difference with a well-cooked and juicy ragù. Guys... what are you doing to me? Mistakes can happen to anyone, but what about lasagna?

Excellent restaurant.
Typical cuisine with some dishes outside the Bolognese context.
The impeccable service makes everything extremely pleasant. Adequate prices. Good wine list with particular attention to the territory. It is a cuisine that sees richness and abundance in condiments. If you want to eat light this is not your restaurant. But once in your life it is not a sin to go astray

I go against the grain, I didn't go crazy with the best lasagna in the world. I didn't like the cheese, a little thin (even though it will be of excellent quality, that was the effect) I didn't like the ragù which seemed overcooked, and I didn't like the cooking, not very crunchy on the surface. The rest is good, but nothing absolutely unmissable. For me.

Exceedingly good service right from the get go. Everyone was super nice, even though we were attended by different people, they got everything right and were always eager to suggest things to make our experience even better.
I highly recommend ordering the lasagna, it was a 10/10.

The tagliatelle with meat sauce thrilled me, a must try. Very good and tasty tortellini in broth, lasagna as per tradition.
Very kind and prepared staff.
Prices are a little high but in line with the quality.

My daughter had been there before and I have to say I wasn't disappointed!
Excellent food, healthy environment and perfect service and what should not be underestimated is that you go out and your clothes don't taste like food!
Excellent for its privacy even for a gala dinner!

Per la seconda volta siamo tornati Al Cambio e siamo rimasti soddisfatti come la precedente… servizio impeccabile, solo un pochino freddo il proprietario ma sicuramente fa parte del suo carattere, comunque sempre gentilissimo

Questa è la formazione del “Bologna che tremare il mondo fa” nella cucina del Ristorante Al Cambio.
La Lasagna tanta decantata e la Cotoletta alla Bolognese con l’osso sono una vera esperienza, il petto di Faraona farcito con patate e tartufo “l’ho confessato alla Chef, imbarazzante da quanto è buono”.
I Tortellini in brodo da vera tradizione, dolci 🔝 e una carta dei vini interessante.
