Partiamo dal presupposto che i piatti erano ottimi,soprattutto la lasagna classica a sette strati e le tagliatelle,non mi è piaciuto il modo in cui il personale ha avuto fretta di chiudere il locale mettendoci a disagio e ansia.
I ragazzi erano educati ma hanno avuto troppe mancanze durante il servizio,il prezzo è troppo alto per quello che abbiamo provato.
Pazienza,mi sforzerò di pensare alla lasagna per farmi tornare il sorriso!

I went with two friends during a trip to Bologna. The staff is very friendly and the atmosphere is decidedly formal. We had the two most iconic dishes of the place, the lasagna and the cotoletta. The first is excellent, but completely different from what you might expect. It is a gourmet dish in all respects, do not expect grandma's lasagna, because they are not even distant relatives. The cotoletta is what I would have expected, excellent too. We also drank an excellent Sangiovese recommended directly by the owner, excellent. I recommend trying it.

Attracted by the various positive reviews and various reels, I also wanted to try this place. The evening overall was undoubtedly pleasant, the service was fast and attentive, even if a little detached. As for the courses, the best dishes are without a doubt: the onion tart and the standing milk. If I could, I would have eaten 10 of the tarts. The standing milk is exquisite and the consistency is really pleasant.
We also tried the famous 7-layer lasagna and it was a bit of a surprise; in fact, for me, it is far from the classic lasagna that a person expects, the difference is mainly in the "ragù" that is on top of the pasta, as the flavor is closer to stewed meat/stew, rather than classic minced meat. The meat flavor is intense and many might not like it. Personally, among all the courses, I put the lasagna in last place because it didn't convince me. I much preferred the pasta with white ragù cooked in broth.
In my opinion, charging €4 per person for the cover charge is excessive, it's true, they bring you slices of mortadella as an entree and some samples of sweets for dessert (all of which are not requested), but in my opinion they don't justify the price.

Questa è la formazione del “Bologna che tremare il mondo fa” nella cucina del Ristorante Al Cambio.
La Lasagna tanta decantata e la Cotoletta alla Bolognese con l’osso sono una vera esperienza, il petto di Faraona farcito con patate e tartufo “l’ho confessato alla Chef, imbarazzante da quanto è buono”.
I Tortellini in brodo da vera tradizione, dolci 🔝 e una carta dei vini interessante.
