This restaurant was fantastic! The service was superb and the food was creative and delicious. The flavor pairings were unique and memorable. The flan caviar dessert was the one of the most delicious things I’ve ever tasted. If you want to have a food experience with amazing service, this restaurant is for you.

We returned to this restaurant after a few years, intrigued by the recently awarded second star.
First, let's talk about the service.
There are so many waiters, perhaps even too many, to the point of being almost obsessive.
For example, while we were sampling the various snacks from the chef's "welcome" menu, as soon as we finished one, the waiter would immediately come over to remove the corresponding plate. Attention is good, but when you overdo it, you risk becoming more intrusive than elegant.
We really enjoyed the dishes.

🇮🇹 Acquolina - Acquolina
🌟🌟 2 MICHELIN Stars
🍴 Creative, Mediterranean Cuisine
🎗️ In a city steeped in history and charm like Rome, few restaurants offer such a unique and distinctive dining experience. With two MICHELIN Stars, Acquolina elevates Mediterranean cuisine into a work of art, brimming with meticulousness and creativity.
🎗️ The First Arte, Rome, a luxurious 5-star boutique hotel under Pavilions Hotel & Resorts, is located on Via del Vantaggio near Piazza del Popolo in the heart of the Italian capital. In addition to the renowned Acquaroof rooftop bar, Acquolina, one of Italy's finest restaurants, is also located on the ground floor. The restaurant's interior is luxurious and modern, featuring a combination of ceiling lights and hidden sidelights. Dark blue carpets and black ceilings create a sense of luxury and depth. The dining tables are covered in crisp white cloths. Comfortable gray fabric chairs provide a relaxing atmosphere for guests throughout their meal. At the back of the restaurant, a large wine cellar exudes a luxurious and modern feel. Wall murals add depth to the overall atmosphere. Blue glasses and small vases of flowers reflect the minimalist table setting. A key visual attraction is the table in the center, where a large vase of colorful fresh flowers draws the eye and adds vitality to the overall atmosphere.
🎗️ Acquolina is one of Italy's finest restaurants. Every dish showcases Chef Daniele Lippi's unique style. Prices are reasonable considering the quality of the ingredients. The wine list is extensive and prices start at just around 40 €. The service is excellent, arguably the best in Rome. For those looking for a meal that's more than just a meal, Acquolina is the perfect choice, immersing you in the exquisite culinary arts with an unforgettable experience.

Acquolina remains a top-end restaurant, recognized by the Michelin Guide with two stars and beloved by those who have already dined there: sophisticated seafood cuisine, refined settings, and excellent service.
However, while the excellent Google rating is reassuring, some experienced users suggest taking online reviews with caution, especially the numerous and positive ones: it's best to also check out TheFork or read Italian reviews on TripAdvisor.it, and prioritize recent reviews with photos and detailed comments.

Insights of the Senses: Acquolina and the Vision of Daniele Lippi
Dining at Acquolina is not simply a meal—it is an awakening, a journey through time, imagination, and the shattering of bias and assumption, guided with masterful artistry by Chef Daniele Lippi. In a city steeped in culinary tradition, Lippi dares to dream beyond it, crafting a tasting experience that is paradoxically playful and profound, deeply rooted and radically original.
Each dish arrives as a poetic composition, spotlit on a dinner table designed to be more stage than surface. The plating alone is worthy of a gallery, yet nothing ever feels forced—every element serves a purpose. Each bite unfolds like a chapter in a story, one that lingers long after the final course.
What sets Lippi apart is his emotional intelligence on the plate: he understands not only flavor, but feeling. He knows when to surprise you, when to comfort you, when to challenge your expectations—and when to simply let silence speak. There is a sense of risk, of curiosity, of art pushing against the edge of its own canvas.
I was particularly moved by a dish that transformed the way I now relate to food: a dessert course—a humble crème caramel—whose chicken eggs had been audaciously replaced with fish eggs. Upon hearing what was to come, I scoffed, my imagination arrogantly rejecting the proposed flavor profile before it even arrived. But on my first bite, I felt goosebumps ripple down my body—and a quiet sadness, as I realized how wrong I had been. The dish was cohesive, sweet, umami, and delicious—and more importantly, it was a lesson delivered through embodied experience: that I often taste with a presumptive mind before opening my senses to taste with my heart. Daniele's bold artistry serves not just courses, but insight on a plate.
The service at Acquolina mirrors this artistry—gracious, intuitive, and informed, but never intrusive. The space itself is an elegant frame for the experience: contemporary, intimate, expansive.
Daniele Lippi is more than a chef—he is a composer, a philosopher of the palate, and one of the most visionary culinary artists working in Italy today. Acquolina is a place where the boundary between food and art dissolves, and where the soul is invited to taste something unforgettable.
This is an artist, a team, and an experience not to be missed. Do not walk—run—to Acquolina the next time you're in Rome. And taste the crème caramel with an open heart, fish eggs and all.

Everything was incredible, exactly what would you expect from a 2 star Michelin restaurant. The food was fresh, Mediterranean, light but very savory. The staff was outstanding, the somelier did an very good job pairing the food with the best wines, and I’m lost for words about the Chef. All in all it was an outstanding experience.
