I had the pleasure of dining at A Sud dell'Anima and I can say that it was a unique gastronomic experience. This restaurant manages to perfectly combine the local culinary tradition with a touch of modernity that surprises and enchants. The menu is a journey through authentic flavours, revisited with creativity and mastery. Each dish tells a story, with very fresh and quality ingredients that enhance the roots of the territory, but with combinations and presentations that demonstrate great care and attention to detail. The staff is friendly and knowledgeable, always available to explain the dishes and recommend the best combinations with an excellent selection of wines. The environment is welcoming and refined, perfect for both a romantic dinner and a convivial moment with friends. A restaurant that honors traditions but looks to the future, offering an unforgettable sensorial experience. I can't wait to go back!

Pranzo eccellente, servizio impeccabile, ambiente escludivo. Nadia, Ivan e Giuseppe ... un trio che fara' molta strada e che rendera' onore alla nostra cittadina ! Veramente bravi !

Location with rustic furnishings, but with refined taste. Possibility of having lunch à la carte or with different tasting menus. We opted for the formula which included 4 tastings of appetizers, a first course and a dessert. All courses were rich in flavour, but very harmonious and balanced. Obviously the products of our Murgia are exalted (cardoncello first and foremost) but with very successful contaminations (cruschi peppers for example). I was particularly struck by the egg cooked at low temperature, with turnips and potato foam and the pappardelle with wild cardoncelli mushroom cream, parsley powder and crusco pepper. A creative and refined cuisine, which is also enhanced by a friendly and very professional staff. Price commensurate with the quality of the dishes and the service. Paraphrasing the name of the place, I would say that it is definitely the Soul of the South. Really compliments

Minervino Murge has a small treasure chest in which excellent seasonal raw materials are treated with discreet, friendly and attentive service. The wine list deserves a particular mention for its assortment and quality.

“Al Sud dell’Anima” è un piccolo gioiello a Minervino. L’ambiente è essenziale ma curato nei dettagli, arredato con gusto, che riflette la calda accoglienza del sud. La cucina sorprende per la sua raffinatezza senza tradire la tradizione, proponendo piatti del menu degustazione con ingredienti di alta qualità e sapori autentici. L’olio, scelto con cura, arricchisce ogni portata. Unica nota: il tempo d’attesa tra le portate, un po’ lungo. Per il resto, un’esperienza eccellente. Consigliatissimo!

Imaginative and exquisite dishes, excellent hospitality and good service; to enjoy the "balcony" of Balcone della Murgia. After two years we returned for a dinner and I must say that the very positive opinion has been reduced. Service not up to par, prices rather high... and then a tip: the "Soul of the South" is our EVO oil. Distributing it with a dropper is a "disrespect" to our cuisine and our "refined palate" and then an Acquasale, even if revisited but without oil, loses the main essence! We will return because we have faith in these young entrepreneurs.
