27/03/2025: At the request of the owner, in order to improve on what we can also make mistakes, I will explain my 2 stars: I would like to point out that courtesy is not lacking as is attention towards the customer, having said this, however, I would like to point out the following problems: My pasta was a first note with artichokes, bacon and pecorino as described on the menu and then I discovered that the pecorino is mentioned in the sense that they bring it to the table in the container and so I wonder why mention it in the name of the dish or is it part of the dish as an ingredient or not, otherwise we would have to put the wording parmesan or pecorino on every single first course I don't know if you understand me, if I eat for example a pacchero mussels and pecorino then it's not like they bring me a I pacchero with the mussels and that's it and the pecorino in the bowl with a teaspoon aside but I expect a dish in which the pecorino is an element of the recipe and not optional and served in the small bowl. Let's move on to the sandwich, it is explicitly requested not to put any sauce present among the ingredients and not only is it put but moreover a different sauce is put not even the one indicated, bad luck has it that the young boy who had asked for the sandwich out of shame says nothing and eats it like that and then only at the end fearfully tells me that he didn't like it but at 12 years old it can be understood even if then when I pointed it out at the time of payment as well as apologizing by blaming the frenzy of orders in the kitchen but honestly we arrived early and when we had ordered there weren't many people yet. Lastly, my wife's meat: she points out to the owner that she is undecided whether to take the meat or not as she doesn't like cooking it rare but at the same time she is afraid that by overcooking the meat it will become tough, a doubt promptly dispelled by the owner who reassures her by assuring him that he would have chosen a quality of meat that would remain soft even if it has a nice crust... in truth they serve him a hard and tasteless dry meat as unfortunately we expected from prolonged cooking and it fits but then I wonder why do you reassure me if it goes like this? Now in the final analysis I have to give credit to the commitment one has towards the customer, the commitment of the owner who goes around the tables asking for information etc... but here in my opinion in the kitchen we go a little too fast and think too much and finishing orders quickly because of the many place settings I imagine with little attention to what we are about to bring to the table in the sense that we should pay more attention that what we serve is actually done well and not just done on time.
