If you want to experience Cisternino's true gastronomic experience, a stop at Zio Pietro is a must. Here, you don't consult a paper menu; you "read" it with your eyes, right at the butcher's counter. ​The Experience: The ritual is fascinating: as soon as you enter, you line up in front of the meat counter. The selection is vast and of the highest quality. It's impossible not to order the famous bombette (cheese-filled capocollo rolls, available in several variations), the livers (gnumeredd), and the knife-point sausage. Once you've chosen your meat, it's weighed and sent directly to the "fornello" (the traditional Apulian vertical oven) for slow, even cooking. ​The Food: The meat is simply exceptional: tender, flavorful, and cooked to perfection, with that subtle hint of embers that only a traditional stove can provide. The traditional side dishes are also excellent; I loved the pickled vegetables. ​The Atmosphere: The atmosphere is rustic, welcoming, and authentic. You can feel the atmosphere of old-fashioned shops. The staff is quick and friendly, despite the constant crowds (a clear sign that this place deserves it).

If you wish to experience freshly prepared, and perfectly grilled meat of Puglia, arm your self with the patient. First you will need to q to select the meat from the butchers fresh counter, afterwards it's the table waiting, and at the end food preparation time. However, it is absolutely worth, because that was the most tender and juicest grilled meat I have tasted.

We had a great time. Since we couldn't make a reservation, we showed up right when they opened and were served promptly. The ingredients are very good, and I appreciated the choice of different types of bombette, all cooked to order. The atmosphere is very pleasant, and the wait staff is welcoming and helpful. We weren't thrilled with the house red wine, but overall, the experience was truly positive. Recommended.

Historic grill restaurant in the heart of Cisternino. Fast and friendly service. The meat is delicious, as are the pickles and traditional appetizers they make. Typical, rustic dining rooms—in short, a must-try!

The meat is fabulous and cooked to perfection...the service wasn't on the same wavelength, perhaps because it was Sunday and there were a lot of people. I'm a fan of the blue and white colors, so I had to turn a blind eye to those black and white walls. Jokes aside, a must-visit for anyone in the area.

A lovely little place to enjoy excellent meat. The butcher's counter is very well stocked. They don't take reservations, but you walk in on a first-come, first-served basis, choose your meat, and then sit inside the small room at your assigned table. You can also order delicious local appetizers, and I highly recommend the baked potatoes drizzled with excellent local olive oil. I've been there twice and will definitely return for top-quality meat. My group and I ordered entrecôte, diaphragm, zampina, and their fabulous breaded bombette. The entrecôte and diaphragm literally melted in your mouth and were cooked to perfection, all accompanied by an excellent house Primitivo. My rating? 10 out of 10.

In 45 years I have never eaten such excellent meat. Also, the service was fast and friendly. I hope to return soon!

We went for lunch on Sunday, and as always, it was a great experience. The restaurant, in the heart of Cisternino's historic center, is very charming and well-kept, with a traditional and welcoming atmosphere. The traditional Apulian ceramic plates and glasses are beautiful, adding an authentic touch to the ambiance. The staff is friendly and helpful. The cured meats and meats are excellent: tender, flavorful, and cooked to perfection. The bombette, in particular, are exceptional: tasty, but not excessively greasy. Excellent value. A must-try for anyone who wants to savor the true tradition of Cisternino.
