If you love Japanese cuisine but have lost your enthusiasm for the usual all you can eat, the PONTE ROSSO restaurant in Ponte Tresa (Italy) is definitely worth a visit. This is exactly why I chose it: here you eat real, high-quality sushi, prepared with artisanal care and served in generous portions, all at an absolutely balanced price. The classic rolls are already a guarantee in themselves: excellent freshness, precise cuts, well-balanced ingredients, no excess rice, but only authentic taste and first-rate raw materials. But the real surprise comes when you get off the beaten track. Driven by curiosity, I decided to let myself be carried away by the proposal of hot cuisine and raw fish: a revelation. Dishes such as meat skewers (chicken and beef) - with a complex but harmonious aromatic profile - and a selection of raw fish prepared at the counter in family style, tell a story made of attention, research and passion. Everything plays in balance between well-calibrated contrasts: between crunchy textures and umami delicacies, between flavor, sweetness and acidity, in a dance of flavors that is never banal. Perfect portions, simple but well-finished plating, and honest prices. At a time when many places are content to “copy”, Ponte Rosso continues to stand out for its authenticity and constant quality. The service? Smart, present, never intrusive. Quick at the right times, but always with a smile.
