25/01/2025: After having been there at least four times in the last two years I feel it is my duty to write some comments... POSITIVE.
The food is very good, tasty, imaginative (without strangeness!) and plentiful dishes.
Very welcoming atmosphere, in the furnishings (modern, warm) but above all in the customer management: attentive without affectation, with the right level of sharing/conversation and explanation of the dishes.
02/01/2025: About 4 years ago I always wrote here that Sine was stellar... even if it arrived quite a bit late. You can verify that I'm not lying! The review is still there! Here we go again. I know our Buer is waiting for her but I would say she won't be too long in arriving. But let's get to us: small, formal but fortunately not too formal environment. Like Carlotta, very kind in welcoming but at the same time super engaging in putting the guest at ease. I choose the courses: autumn wild egg, Castelluccio lentils and black truffle and then continue with my Nino Bergese rice (based on Savona chinotto and reduction of roast sauce). The first is characterized by the originality of the presentation and the balance, I would perhaps have preferred the strong contrast of the truffle but that is naturally my taste. Risotto is SIMPLY one of the most iconic and delicious dishes I have ever tasted. Without too many turns of phrase. In my opinion, it's not a dish for everyone but I loved it: a strong citric flavour, bursting at the start, which however, little by little, merges with the dish. Divine. To conclude, Genziana (chocolate, beetroot and sour cream) represents an example of how a dessert should be set up: not excessively sweet but characterized by different facets which, teaspoon after teaspoon, do not tire but rather entice. All enhanced by consultancy on the world of wine; as an enthusiast, when I come to these places, I have to discover, get to know new tastes, taste 'difficult wines': Carlotta was really good. He perfectly interpreted who he was in front of (rare gift). To conclude, the chef stopped for a quick chat to make sure that everything had gone well (this too, which is not trivial). What to add?!? Don't worry... the 🌟 will come... I bring luck😉.
