We had dinner in this restaurant trying their "Confine" menu, with courses that combine pastries with traditional dishes. Pleasant, sensorial and innovative experience compared to the classic starred restaurant. The single counter with 10 seats allows you to create a convivial experience with the other diners, there are no waiters but only chefs who complete the preparations in front and serve you directly. The highly trained sommelier on whom I recommend you totally rely both for the aperitif with vermouth and for the tasting of 6 wines for €90.

Ten seats at the counter, so as not to feel cramped, being in a starry, top hotel. Young brigade, all with a great passion. Everyone cooks and serves. The dishes are completed in front of the diners. Attentive and discreet service. A technical, thoughtful and intelligent kitchen. Pairings with a pinch of risk, but never invasive. We relied on Jacopo, the only one who is not a chef, but a sommelier, for pairing wines with dishes. We couldn't have made a better choice. The venue is spectacular. Fully satisfied with our experience.

Remarkable! It was my first real starred one and I must say that the experience did not disappoint my expectations. The attention to detail in every aspect (from the format of the venue, to the music, to the presentation of the dishes) was truly appreciable. Each course managed to amaze me in some way: above all I liked the courage to propose even very strong flavors (my taste buds left there shaken but very satisfied). Perhaps the only weak dish for me was the dessert with radish, but maybe I didn't understand it, it could be okay. I don't give it full stars for 2 reasons: one of these is the price. On the website the tasting menu costs 30 euros less than what I paid for it. I know that eating at these levels is a luxury and that I still left satisfied, but I believe that transparency is important, even when we are talking about high figures. The second reason is the service, that is, I found a strange mix between the extreme formality (three of them bent down to pick up the scarf that fell to the floor as soon as we arrived) and the intimate and friendly atmosphere they wanted to create. I had a similar experience abroad where everyone ate at the same table (it wasn't a Michelin star but the level was still high) and I felt much more "slackish". Obviously they are two different experiences but still very similar in format, and in this case I felt a little uncomfortable. However, I would like to say that the boys gave their all, and that my modest opinion concerns precisely the "mood" to be pursued (for me it should be either totally formal or "shawl").

Nuestra experiencia en globo aerostático fue excepcional. Con 15 años de vuelo en su haber, Francisco Pantaleón fue el mejor piloto que pudimos haber tenido: profesional, tranquilo, experimentado y amable. Él nos dio un magnífico recorrido y todos nos sentimos 100% cómodos y seguros. El vuelo fue suave desde el despegue hasta el aterrizaje, y las vistas, por supuesto, son increíbles. Realmente una visita obligada para los visitantes de CDMX. ¡Inolvidable!

Pleasant place with excellent music, kindly welcomed by friendly, knowledgeable young people.
Excellent dinner accompanied by good wines, all presented in a perfect and meticulous manner by the chef and sommelier.
All 10 guests dine together around the counter where the various chefs prepare the pleasant dishes.
A restaurant worth returning to and recommending when you want to make a good impression.
