Located in the heart of Pinerolo, Trattoria Zappatori confirms itself as one of the most refined and surprising realities of the Piedmontese gastronomic scene. With a well-deserved Michelin star, this restaurant succeeds in the non-trivial feat of combining the profound identity of traditional cuisine with the courage of innovation. Our experience for my birthday with the “Breakfast for work” tasting menu (with the addition of some off-menu items) was a brilliant demonstration of this philosophy. From the small initial amuse-bouche to the final dessert, the path is coherent, without excess, but with flashes of originality that surprise and stimulate the palate. Particularly noteworthy was the first course, where the tradition of fresh pasta was combined with a sauce with unexpected nuances, a perfect balance between comfort food and research. The environment is elegant but not excessively formal, with an authentic warmth that immediately puts you at ease. The staff is attentive, friendly and well-prepared in guiding the guest through the proposals of chef Christian Milone, whose touch is perceived in every detail, from the plating to the balance of flavors.

We had the privilege of dining at Trattoria Zappatori, choosing the 6 modern course tasting menu, created by chef Christian Milone and focused on the valorisation of hazelnuts and eggs, two symbolic ingredients of the Piedmontese territory, reinterpreted with creativity and precision.
The selection of wines, curated with great professionalism by the sommelier for each individual course, was impeccable. Friendly, attentive and gifted with surprising intuition, she was able to enhance each dish with perfectly calibrated combinations, adding a personal touch that made the experience even more special.
We had the pleasure of dining in the secluded room overlooking the Zen garden, characterized by a modern fireplace which helped create an intimate and elegant atmosphere, perfect for celebrating our anniversary. A space that made the evening even more memorable.
Each course was a journey through innovative flavours, with a presentation taken care of down to the smallest details, an expression of the mastery of the chef and his team. A true homage to Piedmontese cuisine reinterpreted in a modern key, capable of surprising and conquering even the most demanding palates.
I highly recommend this experience to those who want to discover the more sophisticated and modern side of Piedmontese cuisine, accompanied by a high level of service made possible by the dining room staff who are extremely attentive to everything. Congratulations to all the staff for their excellent work!

I had the pleasure of having lunch here and the experience was absolutely exceptional.
From the moment we entered, the elegant and welcoming atmosphere struck me positively, with impeccable service that accompanied us throughout the lunch. The dining room staff is kind and attentive to satisfying every need. The description of the dishes was engaging and allowed us to connect with the territory and the seasonality of the raw materials (of excellent quality).
The cuisine is, without a doubt, the heart of the experience: true masterpieces, from the presentation to the balanced and innovative flavors. Each ingredient seems carefully chosen and the preparation original. A perfect balance between tradition and modernity, capable of surprising and conquering our palates.
The highlight of the experience was definitely the reinterpretation of the fried egg: a true harmony of flavors, which confirmed the very high level of the cuisine.
Even the wine pairing, proposed by the Sommelier, was a pleasant discovery, with a selection that was able to perfectly accompany each course, further enriching the gastronomic experience and tying it, once again to the territory, with local wineries of great quality.
A special appreciation also for the small pastries: a perfect final touch.
If you are looking for a unique culinary experience, that knows how to surprise and pamper, this is definitely the right place.

My wife and I had a really good time. The restaurant, unique in its style, is cared for down to every detail. The dishes offered are really interesting and never banal, prepared with great care and attention to detail. The selection of wines and the support of the sommelier are also excellent.

The venue is surprising because, within an ancient and traditional context, innovative and contemporary design choices harmoniously coexist.
The perforated sheet metal leaves hanging from the brick vault outside and the handle on the entrance door are a first glimpse of what will be found inside.
The room is divided into several expertly screened areas, so as to guarantee a certain privacy but at the same time allow dialogue between the different areas, including the kitchen and the wine cellar.
The choice of black is very courageous, "dripping like pitch" on the brick walls, and the use of anthracite-coloured metal for the furnishing components and partitions that separate the rooms. These material and chromatic choices, supported by a very careful study of lighting solutions, create an intimate atmosphere.
In this regard, I would recommend this location for special moments to enjoy as a couple but also for group lunches/dinners.
As an architect I can only compliment the interior designer who designed the spaces and the Chef who dared to develop a concept of great character which, precisely because it is not banal, may not meet with everyone's approval. For this reason alone it would be worth visiting the spaces for a business lunch.
From my point of view the restaurant, with its strong and contrasting identity, is a mirror of the kitchen.
From the point of view of the food and wine proposals, I can only say that it was a sensorial experience, made up of contrasts, of flavors that chase each other and intertwine with each other, of expertly mixed consistencies, colors and aromas.
I could describe the various dishes, tell how an ingredient, apparently banal like a potato, can on the contrary surprise or how many nuances of sweetness can be obtained with a carrot, but the truth is that this type of cuisine should not be described but tried.
I also really appreciated the "narration" of the restaurant manager who was able to enhance every single course. I can say the same thing about the sommelier who described the wines tasted with great competence, but also with a certain and appreciated informality. Excellent wine/course pairings.
I strongly recommend this restaurant and plan to return, probably in other seasons, to try the reinterpretations of traditional cuisine in an innovative and creative way, with the use of seasonal products.

Bellissima esperienza in un ristorante particolare a Pinerolo entrando da un porticato anonimo si entra in un’ atmosfera moderna Neri alle pareti tavoli ben curati distanti con luci di design … cucina attenta, ricercata, e sofisticata dove la tradizione fa rima con innovazione infatti al vitello tonnato, la carne vengono affiancati piatti molto elaborati con attenzione alla
stagionalità degli ottimi prodotti. Ottimo anche il benvenuto dello chef con il burro in tre varianti con pane artigianale caldo … la spuma di patate con zest di limone o i raviolini che esplodono in bocca lasciandoti mille sapori. Ragazze in sala molto attente educate e gentili … consiglierei una piccola velocizzazione nel servizio ma ristorante da provare !!!
