16/03/2025: Excellent trattoria near Tivoli, we ate a succulent steak with roast potatoes, sausage and chicory.
Everything was good, even the crumbled bread.

11/03/2025: After a morning of work in Tivoli do we want meat??
Promptly our. trusted advisor in the area tells me, but have I never taken you to Ragno? As long as it's not golden like the other restaurant, we'll go there with confidence!
The location is a bit country in the rural sense of the time, deliberately left with that ancient and beautiful flavour
A nice wood oven for the evening, too bad, a nice focaccia is always good and a nice fireplace for the embers
The rooms are large and the mise en place is sober
At the entrance you can clearly see the fridge for maturing with some nice large cuts, we sit down and the menu arrives, very varied, but we focus on the meat
Angus in 3 different variations:
Dry aged beef or scottona
Irish log
black angus USA
cooked medium rare, we don't recommend it rare perhaps due to the type of maturation
cooked vegetables, sour chicory and sautéed broccoli
We have some ham and mozzarella brought to us while waiting for cooking, the raw ham is excellent, but the mozzarella is less so
then come the side dishes and followed by a nice round cast iron on which the various cuts we have chosen are already portioned out, each in 3 pieces
I see on the wine list a prestigious Dama di Marramiero, a great Montepulciano d'Abruzzo whose cellar I know personally having been there several times and we begin the tasting
the meats are truly remarkable, cooked very, very well and the excellently made peasant knife does its job
we made an excellent choice which ended with desserts, including ricotta and pear cake, crumbled berry cake and Catalan cream, coffee and bitters
