I have known Silvia, Johnny, Filippo and Lorenzo since they had the other restaurant and I have followed them because going out to eat is not just a matter of leisure or convenience because you don't feel like cooking or because we are passing through the area: I leave from Livorno on purpose, for example. The open kitchen was a strong point in the other restaurant too and they have kept it as a winning idea. The environment is intimate, logically very clean, and everything chosen as furniture or furnishings is not there by chance: this thing allows you to get to know Silvia in a subliminal way more than anything else. Johnny is a very ambitious man and therefore always tries to outdo himself and proposes things only when the level of the final result is at its maximum, this refers to the dish and its presentation. When he comes out of the kitchen and comes to ask you if everything went well, he doesn't do it to be celebrated but only because I am pleased to have satisfied the customer's needs. Filippo is very capable in the service and is constantly evolving both for the topic of wines and for meats: apart from the sommelier courses he often goes around to other restaurants just to understand what not to offer in his. Lorenzo in the kitchen with his dad is learning I go out I take the various cooking methods, some invented by Johnny himself.
It's all delicious but I'll tell you how I reasoned the first time I arrived there: "If you put ragù on the menu of a restaurant you have to do it better than I do it." In fact I prefer that.
My vote is 10 on everything.

In questo ristorante si và dritti al succo, pochi fronzoli e tanta qualità, piatti tradizionali fatti bene con un tocco di modernità dove serve.
Menù interessante e vario, tutti i piatti che ho assaggiato erano preparati ottimamente.
Buono il vino proposto della casa, in alternativa c'è una selezione non banale di vini anche locali.
La famiglia che ha assunto la nuova gestione è carina e disponibile, si percepisce la passione per quello che fanno.
I Prezzi, commisurati alla qualità di quel che si mangia sono più che onesti.
