13/03/2026: A delicious three-course tasting menu, with other interludes from the chef. Little to say about the taste and service; the wine cellar was small but of high quality. Many dishes offered a refreshing experience, despite the local flavors seemingly suggesting a more substantial cuisine. My only personal criticism concerns some dishes, specifically their form (content); for some courses, I found they didn't enhance the aesthetics of the content, as in the case of the main dish, Claudio, served on a plate that excessively obscured the dish, or the dessert served on a tray that made it difficult to pick up the dessert once it had melted.

08/03/2026: A splendid restaurant in the heart of the Pontine Marshes. Experimental and elaborate dishes. Recommended for years in the Michelin Guide and awarded a star. The full-service kitchen immerses you in the preparation and presentation of the dishes. Very reasonable prices for what they offer, impeccable and extremely friendly service. The tasting menus are a must-try. The wine cellar offers a vast selection.
