I’m from Taiwan and a true Napoli pizza lover. Every time I travel or visit Italy for business, I always make it a mission to find great Napoli pizza in every city. Last night, I visited a well-known award-winning pizzeria in the city center. Even before it opened at 7:30 PM, there was already a long line outside. We ordered three pizzas — they were good by most standards, but to me, just average. Speaking from a technical point of view: the dough seemed to have a low hydration ratio, and there was too much flour dusted on it, which made the crust a bit dry. Once the pizza cooled, it became quite chewy. I’d rate that famous, award-winning place around 85 out of 100 — decent, but not impressive. Today, after a long day trip by train, we returned to our apartment feeling too tired to go far for dinner. I opened Google Maps and found this pizzeria just around the corner — only 30 meters away. The photos and reviews looked mixed, but I decided to give it a try. And wow… this was exactly the kind of Napoli pizza I love! 👏 The crust was thin, soft, and beautifully airy — likely made with a higher hydration dough or perhaps using a biga or poolish starter, which helps the dough puff up perfectly in a high-temperature wood-fired oven. The flavor and texture were amazing! My only small regret is that I ordered it for takeout. Once pizza sits in the box, it loses that light crispness it has when eaten fresh from the oven — but that’s totally on me, and it doesn’t take away from how good it was. Truly a wonderful surprise! 🍕
